Weekend Recap {May 30 - June 1}

This weekend was lots of fun, but it flew by. Did anyone else feel like they needed one more weekend day?

My weekend was filled with wine, girl time, a baby shower, a garage-warming party, great workouts and lots of good food. Here's what happened...

Friday, May 30


After work, I drove to Hastings to meet up with my friends Russanne and Meggan for baby shower crafting! Yep, you read that right. A wild Friday night of crafting! The three of us planned our friend Betsy's baby shower, and we needed to finish up a few things before the big party Saturday. 

All three of us had stressful weeks, and were in need of a girl's night. We all showed up with a bottle of wine! We snacked on whole wheat tortilla chips and salsa, edamame and fresh strawberries while we frosted cookies, made plans for the party, chatted about life and laughed a lot.

I didn't have dinner before our little get together, so I requested a ride home from the BF after the wine drinking. Booze + no dinner = not a good idea. He happily obliged.

Saturday, May 31

I woke up super early and starving since I didn't eat dinner the night before. I was craving my usual muesli mix so I combined oats, chia seeds, cinnamon and honey in a bowl, but then realized that the BF was out of plain almond milk. Since I already had my oat mixture in a bowl, I used chocolate almond milk and topped it with natural peanut butter. It wasn't my fave.

After lounging around, blogging and sipping coffee, I hopped on my bike and road to Avani Yoga Studio for Power Yoga. I was very excited for the class because I hadn't been in over a month! Half-marathon training got in the way of my Saturday morning yoga sessions and then I subbed classes at my gym for a few Saturdays, and then we were in Colorado. 

Since I was the first one there, the yoga instructor, Chelsie, asked if there was anything I wanted to work on. I requested Crow Pose practice since I was able to get into a crow pose for a few seconds a couple of weeks ago. However, about 20 minutes into the class I was profusely sweating. Like, sweat dripping down my face, into my eyes, off my nose, off my chin onto my yoga mat. When we got to Crow Pose my arms were so sweaty, I couldn't even keep my knees on my triceps. I was a hot mess. Especially since no one else seemed to have this problem. Chelsie very kindly told me I was glistening. I know better. I'm pretty sure I was just sweating out chardonnay.

After yoga, I realized I had a flat tire so I called the BF and walked over to a coffee shop for iced coffee while I waited for him to pick me up.

It was then baby shower time! I met Russanne and Meggan at Betsy's church to set up for the shower. We served pretzel crisps with a southwestern dip and spinach and artichoke dip (made by Hy-Vee), a fruit rainbow, baby blue M & M's, trail mix and frosted sugar cookies.

Meggan made adorable rain clouds out of balloons and streamers, and we put pretty blue and white flowers on each table.

The event was a success - lots of people came to celebrate, Betsy received lots of great gifts and we did fun baby shower crafts (no cheesy games!).

After cleaning up, the BF and I headed to his friend Carmen's house for her garage warming party. She just finished renovating her garage and wanted to show it off! We hung out in their beautiful backyard for a couple of hours before heading home. The BF wasn't feeling well and didn't have much of an appetite, so I got myself a southwest chicken salad from Runza. 

We watched the movie Butter, which was very cute, before going to bed pretty early.

Sunday, June 1


I woke up super early, as usual. I went right to the grocery store to pick up ingredients for breakfast. I then made a Feta and Spinach Frittata from Michael Symon's 5 in 5 Cookbook, which I got for my birthday. It was the easiest frittata I've ever made, and it was delicious. We also ate some fresh fruit leftover from the baby shower.

I met up with Russanne at 10 a.m. for our new Workout Club! We're going to be doing workouts at the high school track this summer. I'll share our intense workout tomorrow!

After our workout, we went on a long bike ride around town. I got to ride my new road bike for the first time, and it was amazing! We stopped to admire some adorable baby geese!

When I got home, I made black bean and spinach quesadillas with Greek yogurt for the BF and I. 

I sipped on Raaw Beet Juice while I cooked lunch. I just read in my Self Magazine (from May) that beets contain the chemical nitrite, which has been shown to lower blood pressure and protect your heart. If you sip on beet juice before a workout, it could reduce breath rate during exercise, which means it would be easier to go faster and longer. I should have drank my beets before our workout!

The BF and I spent the afternoon lounging around - I read magazines while he watched soccer. We did make it out of the house to get groceries for dinner. But it stormed most of the afternoon and evening, so staying in was perfect.

For dinner, the BF made Chicken Thighs with Couscous Salad from the 5 in 5 Cookbook. I am super weird about meat and never eat meat on bones. But I'm trying to get over my issues, which is why I planned this meal for dinner. I actually enjoyed the flavor of the chicken and didn't get too grossed out while eating.

I love getting in good workouts and making healthy meals on the weekends! I always feel so much better on Monday after a healthy weekend. What did you do this weekend to stay healthy?
