Weekend Recap {June 6-8}

How is it Monday already? I think we should all sign a petition for three-day weekends during the summer. 

I had a surprisingly busy weekend. I went into the weekend without tons of plans, but I was on the go constantly.

Friday, June 6


All day long I was looking forward to taking a dip in my parents pool, but by the time I got off work the weather changed and it was cloudy and looked like rain. So I changed my swimming plans and got to work on packing, organizing and cleaning. (As I've mentioned before, the BF and I are moving in together soon!) I worked from about 5:30 p.m. to nearly 11 p.m. and only took a break to make dinner - a grilled cheese sandwich with sautéed mixed greens, tomatoes, mozzarella and feta. 

Saturday, June 7


I woke up super early (which I tend to do in the summer when the sun rises earlier), and made my fave pre-run breakfast - Ezekiel toast with almond butter, banana slices and honey. I also had an apple cider vinegar drink and coffee.

Then I headed out for a run! It was really cool outside so it was a nice break from the hot weather we've been having. I ran 4 miles, and felt like I could have kept going but I had another workout planned for later in the day.

I sipped on some homemade beet, apple and ginger juice while I got back to my packing/organizing/cleaning project. 

For lunch, I made a warm salad with kale, spinach and chard topped with roasted asparagus and Brussels sprouts, tomatoes, feta cheese and an egg. 

Before I knew it, it was time for workout #2. I taught a Piloxing class at Heritage Day at Yanney Heritage Park. Heritage Day is a fun family event that features musicians, a storybook walk, bouncy houses, face painting, free fitness classes and dance classes, fishing, a 5K, kayaking, fireworks, food and more. Kearney Park and Rec asked if I would teach my Piloxing class at the event. 

Unfortunately, it was a bit cool on Saturday and attendance wasn't stellar. Three tweens showed up to take my class. Luckily my entire family came to support me! My parents, brother, sister-in-law and niece all took my class! It was super fun and so great to see my family being active together. And, I think my sister-in-law is going to sign up for my next Piloxing session through Kearney Park and Rec!!! (call them at 308-237-4644 to sign up).

After my class, the fam and I walked around the festival. We waited in line for nearly 45 minutes for my niece to get her face painted, then we were cold and ready to leave.

And my niece gave me this adorable picture she colored! She told me she wanted to draw me a picture with all the healthy foods.

I took off for Hastings to spend the rest of the weekend with the BF. I ate some fresh fruit and a Clif Mojo bar on my drive because I was hungry after Piloxing.

We had a fun night out at Keno Bar and Grill. The BF taught me how to play keno! We won $6!! 

However, the food was terrible. I ordered barbecue chicken thinking it was going to be pulled barbecue chicken, but it was just a chicken breast drizzled with barbecue sauce. Boring. Luckily, I had some fries to make up for it.

Sunday, June 8

I made whole wheat buttermilk pancakes from a box (Hodgson Mill) with a homemade blueberry topping (warmed blueberries, cinnamon, vanilla extract and honey). I also made some bacon for the BF. The pancakes ended up being really dry. They would have been better made from scratch.

The BF and I decided to take a road trip to a little town called Silver Creek, which is about an hour and twenty minutes away from Hastings. His sister, niece and nephew recently moved there. We had fun playing with them at a park near their house and catching up.

On our way back to Hastings, we stopped in Grand Island for lunch. We wanted something healthy and quick, so we went to the Hy-Vee salad bar. I loaded my plate up with spinach, mixed greens, snap peas, cucumber, sunflower seeds, almond slices, cottage cheese, cantaloupe, honeydew and granola. It was delicious!

Then we went on a mission to find the BF new jeans. I, of course, bought a dress - a blue and white fit and flare dress for my cousin's wedding rehearsal dinner July 3 (they're having red, white and blue theme!). I'll add red accessories to this little number.

I was supposed to meet our friend Russanne for Sunday Workout Club, but our shopping took longer than expected so I had to cancel last minute. Sorry Russanne! I also missed our first long bike ride for our training. I'll have to make it up this week.

Back at home, we made turkey burgers topped with blue cheese and Frank's Buffalo Sauce, roasted asparagus and Brussels sprouts and Alexia sweet potato puffs for dinner. I had a glass of chardonnay and two peanut butter cookies while we watch the movie, "The Music Never Stopped," which was incredibly sweet. 

My weekend definitely lacked relaxation, but it was rich in productivity and fun. Now it's time to start another week!
