Watermelon Chia Juice

This was a fun little experiment that turned out to be delicious!

I made watermelon juice because I ran out of room in the container I was using to store my watermelon chunks.  I threw about 1/3 of my watermelon into my blender and added a cup of coconut water, then blended.

It was quite tasty and refreshing just like that, but I got a wild idea to throw some chia seeds into the mix.

Chia seeds are a great source of omega-3 fatty acids, protein, fiber and calcium. I put chia seeds in my morning oats, in overnight oats, in smoothies, in pancakes, in yogurt and on salads. You can also add them to muffins, breads or cookies when you are baking.

When chia seeds soak in a liquid, they expand forming a gel that is said to help keep you feeling full longer. (Source) You may have seen chia drinks at the grocery store - bottles of liquid with little seeds floating around. They look weird, but they are incredibly good for you!

To make my Watermelon Chia Juice, I poured my watermelon/coconut water mixture into small glass jars (about a cup of juice in each), then added 1/2 tbsp. of chia seeds to the jar. I let it sit overnight to allow the chia seeds to absorb the liquid and puff up a bit. The result was a delicious (and super easy) chia drink!

This is a perfect summer drink because you get all the health benefits of the chia seeds, and the watermelon and coconut water keeps you nice and hydrated! This drink will also satisfy your sweet tooth!

If you would like a little bit of carbonation in your Watermelon Chia Juice, add some sparkling water! Mmmmmm!

*I also just read in the July issue of Fitness magazine that drinking watermelon juice before a workout helps reduce post-workout soreness.
