Weekend Recap {Aug. 1-3} - Summer scones, champs and more moving

After spending the last three weekends moving, unpacking and cleaning, the BF and I spent the first half of this weekend doing...not a lot. We got in a couple of workouts, made some delicious meals and relaxed. It was much needed!

But we got back to work cleaning the BF's old house on Sunday. Moving is hard work! I feel like I need a vacation from moving! 

I promise that my Weekend Recaps will be a little more exciting as soon as we finish all this moving stuff!

Friday, Aug. 1

After work, the BF and I went for a run! We're doing the FitFluential August Fresh Air Fitness Challenge. We're working out outside for at least 30 minutes each day. I actually struggled a bit with this run. It was hot, and I haven't been running a whole lot lately.

It was then time for date night, I mean grocery shopping with the BF! This was our first time getting a major grocery haul since we moved in together. It was fun! And my grocery haul definitely looked a bit different than usual. I'll share our grocery haul and meal plan for the week tomorrow.

However, we made the mistake of not eating after our run and before getting groceries. So we were starving after shopping. We ended up grabbing some Mexican food around 9 p.m. because we were both getting hangry. I had my usual chicken fajitas (no rice and beans/with corn tortillas).

Saturday, Aug. 2

I woke up at 6:30 a.m. for some reason, so I got up and made Strawberry Rhubarb Scones! I'll share the recipe later this week. They were delish. 

After breakfast, I watched Fat, Sick & Nearly Dead, an amazing documentary about the power of food. Seventy percent of disease is caused by lifestyle choices! Can you believe that? The film made me want to do a juice cleanse for a few days! I'm going to do some research, then I'll get back to you on that.

Then the BF and I headed out for a long bike ride. We ended up riding 22.8 miles! However, I had a few mini meltdowns during the ride. I don't think I fueled enough before the ride. We did stop about halfway through our ride and refueled with Honey Stinger energy chews, but I think I needed more before the ride. Also, there is nothing more defeating than riding your bike up a hill against the wind. Or riding with someone who has shoes that clip to their pedals, which allows them to ride way faster than you. I seriously need some road biking gear!

I recovered with a chocolate coffee protein shake using Simple Being Chocolate Truffle protein powder (I won it at FitBloggin), almond milk and cold coffee.

For lunch, I made this Caprese Quinoa Bake. It was soooooo good! It would be perfect for brunch or as a side dish with chicken.  

After running a few errands (Justin's Hazelnut Butter packets were on sale at Target for $.54!!), I had an afternoon snack of sliced bananas, chia seeds, goji berries and hazelnut butter. It was delicious!

Later, I got to work creating a new cocktail using my fave booze of the moment - champagne! Look for the recipe on Friday!

For dinner, the BF grilled chicken breasts and I threw together big salads and some Uncle Ben's quick wild rice. It was a simple, but satisfying meal. 

To end the night, we watch Delivery Man, which was pretty cute, and we ate some ice cream for dessert.

Sunday, Aug. 3

I slept in until about 8:30 a.m., then made my fave go-to breakfast - oats, chia seeds, goji berries, cinnamon, almond milk, almond butter, honey and blueberries. I also had an iced coffee with almond milk. Mmmmmmm.

We eased into our day with a morning movie - Girl Most Likely, which was just OK. Then it was time to get to work!

The BF and I drove to Hastings to continue working on his old house. We had to finish packing his kitchen, and clean, clean, clean! 

After a few hours of hard work (our 30 minutes of outdoor activity was moving boxes), we headed over to his dad and step-mom's house to say hi. Then we had an amazing dinner with friends, Carmen and Clark! They invited us over because they knew we would be working all day at the BF's house. They served smoked chicken, roasted yellow squash, onions and mushrooms and corn on the cob. It was all delicious! Carmen also made me a refreshing grapefruit cocktail. I forgot to take a pic of my meal. #bloggerfail

The BF and I finally headed home, and arrived back at our new house after 9:30 p.m. 

I ate a bowl of cereal (The BF has me hooked on snacking on the occasional bowl of sugary cereal!) then went to bed completely exhausted.

When I woke up this morning, I felt like I could have slept for a few more hours! But it's time to get back to the grind.

One last thing! FitFluential regrammed my photo of our bike ride! I was so excited to see it come up on my Instragram feed. Totally nerdy, I know. But it made my day.
