Weekend Recap {Aug. 15-17} - Zucchini overload + Pool time everyday!

The BF and I had no plans this weekend! We definitely needed it after spending the past three or four weekends packing, moving, unpacking, etc. And I needed a relaxing weekend after last week's 65-mile bike ride. I pretty much spent the entire week recovering.

We took advantage of our free weekend by making lots of healthy meals, soaking up the last few weeks of summer in the pool and watching lots of movies. Although we still have boxes we need to unpack, we decided to give ourselves a much needed break....

Friday, Aug. 15

My dad gave the BF and I the biggest zucchini on the planet, so I made Lemon Zucchini Bread (I used whole wheat flour). I still had 3/4 of the veggie left, so I then made Zucchini Muffins (I used spelt flour because I didn't feel like making oat flour). I still had about 1/4 of the zucchini left!

After all that baking, I didn't feel like cooking dinner. The BF and I decided to use up a gift card to Ruby Tuesdays. I had a huge salad from the Garden Bar, a pomegranate margarita and fish tacos. It was good!

It was then time for what is becoming our Friday date night ritual - grocery shopping! We hit up Hy-Vee for some ingredients for our weekend meals. 

Saturday, Aug. 16

I woke up at 7 a.m. and hit my yoga mat immediately. I did the Body by Bethenny yoga workout. I felt super stiff when I started, but by the end I felt soooooo much better.

After my morning yoga, I made breakfast - quinoa patties with harissa and eggs. It was super delish, but mine didn't look as pretty as the photo above from Naturally Ella, which is where I got the recipe.

The BF and I then hopped on our bikes and road to the farmer's market. We bought kale, beets, a cucumber and green beans. 

I whipped up lunch - a salad with mixed greens, tomatoes, hemp seeds, sunflower seeds, olive oil and balsamic vinegar and zucchini noodles with pesto and chicken. I used up the rest of our giant zucchini!

It was super hot Saturday, so we hit up my parent's pool! It felt so good after getting sweaty on our bikes. After a couple of hours in the pool, we enjoyed ice cream treats.

Brynn and I then went for a short bike ride and played at the park!

I dropped Brynn off at my parent's house and went home, and it was time for sangria! The BF made white wine sangria Friday night and it was ready to go Saturday evening!

Here's how he made it..

2 bottles of white wine

1/2 lemon

1/2 lime

1 orange

diced peaches

1/3 cup pineapple orange juice

For dinner, the BF made salmon, grilled veggies and salad. We spent the evening sipping sangria and watching Spark: A Burning Man Story, a documentary about Burning Man. 

Sunday, Aug. 17

I woke up around 7:30 a.m. with a bit of a sangria headache. Alcohol is not my friend! I didn't want to spend my Sunday feeling hungover, so I cured my hangover with some natural remedies...

  • Oil pulling
  • Dry brushing
  • Warm shower
  • Yoga for hangovers by Tara Stiles (this videothis video and this video)
  • Detox meditation by BexLife
  • Apple cider vinegar drink
  • 30 oz. of water with Nuun
  • Peppermint oil on my temples

It worked! I felt better in no time. 

And then the BF's dog, Coda, decided to hit the yoga mat.

I made whole wheat pancakes for breakfast. I just used a Hodgson Mills Whole Wheat Buttermilk Pancake Mix. I topped mine with pure maple syrup, almond butter, blueberries, goji berries and coconut. Delicious!

The BF and I eased into our day by watching a documentary called UnHung Hero, which is about the pornification of our society and obsession with penis size. Sounds weird, but It was really interesting!

For lunch, the BF made stuffed portobello mushrooms with cream cheese, turkey sausage and mozzarella cheese. Yum! (Like how he put the mushroom stem on top!?)

I then used my Farmer's Market goodies to make some juice. The juice above is 1 bunch kale, 1/2-inch slice of ginger, 6-7 mint leaves, 1/2 orange and 1 mango. I also made a watermelon mint juice and beet juice! Yum!

Time for the pool! I spent about two hours in my parents pool with my niece and parents. The BF eventually joined us.

For dinner, the BF and I made Soba Noodles with Chicken and Peanut Sauce from the Runner's World Cookbook. It's one of our fave meals!

We spent the rest of the evening chilling on the couch listening to a crazy rain storm.
