Weekend Recap {Aug. 29 - Sept. 1} - Labor Day Weekend!

The BF and I had a low key Labor Day weekend, which was much needed. 

The weekend was a great mix of relaxation and productivity, delicious homemade indulgences and healthy meals.

Here's what I ate, how I stayed active and all the exciting things I did this Labor Day weekend... 

Friday, Aug. 29


After work, the BF and I went for a 3.3 mile run! It felt great. I love the pic he took of me hydrating and stretching after.

The BF and I have started a little Friday night tradition - it's a super romantic date night. We have dinner then go grocery shopping at Hy-Vee. Aren't we exciting?! (I'll share our grocery haul and weekly meal plan later this week!)

After our romantical outing, we closed the night with Blue Bunny Birthday Party ice cream. I know it's terrible, but I have an ice cream addiction.

Saturday, Aug. 30


Breakfast was tomato, pesto, mushroom and mozzarella omelets and toast. So good!

Then a trip to the Farmer's Market.

And a trip to Target - roasted coconut chips were 2 for $5 and my fave champs was on sale!!!

A salad with organic mixed greens, roasted beets, shredded carrots and blue cheese and a side of tabbouleh for lunch.

The early afternoon was spent painting a cabinet, which I'm using for all my office supplies. Look at me being crafty!

Breaking Bad all afternoon (I am way late to the party and just started watching BB over the weekend!) with a little snack of sliced banana, dark chocolate chips and coconut chips (photo taken on my new homemade light box! I'm working on becoming a real blogger!).

I needed a TV break so I did Jillian Michaels Yoga Meltdown.

Dinner was the BF's epic leftover nachos. He takes all of our chicken taco leftovers and makes nachos that are beyond amazing.

I also tested out the new(ish) Skinnygirl Sparkling Margarita. It was light and refreshing! We ended the night with the movie, The Family, which was just OK but entertaining.

Sunday, Aug. 31

One of my fave things to do on Sundays is make a delicious (indulgent) breakfast. I LOVE sweet breakfasts, so I went all out and made French toast for the BF and I. Mine was Coconut Crusted Peanut Butter and Banana Stuffed French Toast and the BF's was Peanut Butter and Jelly Stuffed French Toast. Wow!! Delish! 

We then had to drive to Hastings to do some work on the BF's old house (he's getting it ready to sell). 

Our work didn't take as long as we expected so we were back home by 3 p.m. We had a late lunch - mixed organic greens, bulgur, grape tomatoes, a runny egg and avocado.

The afternoon and early evening was spent doing some major relaxing. Dinner was soba noodles with jarred tomato sauce with added green peppers, red peppers and mushrooms and garlic toast.

I watched a few episodes of Friends while sipping my Calm drink and searching Amazon for a humidifier. I'm pretty wild, I know! I've been having some issues with a super dry nose, so I bought this humidifier. I also bought the Element: Power Yoga DVD!! Since I haven't found an affordable yoga studio that I like yet, I need a little motivation to do yoga at home!

Monday, Sept. 1


The BF and I slept in until about 7:30 a.m. and moved pretty slow once we were up. I had my old stand by breakfast - oats, chia seeds, goji berries, cinnamon, honey, almond milk, raspberries, strawberries and almond butter.

We spent most of the morning watching the movie, The Way, which was a sweet movie.

Half a Kombucha to get me energized!

Then it was dog park time!

After a simple salad and salt and vinegar potato chips for lunch, I spent the afternoon finishing unpacking. The BF and I moved nearly two months ago, and I'm still unpacking! Ugh! I unpacked my office boxes and filled up the cabinet that I painted Saturday. I still need to put the doors back on, but it's coming together! All my race bibs and medals are piled on the top. I need to find a creative way to display them!

I took a break to watch the last episode of season one of Breaking Bad. I'm totally hooked! I also had banana slices, dark chocolate chips and roasted coconut chips again.

The BF grilled for dinner - chicken breasts, veggies and potatoes. Mmmmm. The BF is a pro at seasoning chicken and grilled vegetables. He turns a simple dinner into something completely and amazingly delicious!

We ended the night by heading to the movie theater to see Guardians of the Galaxy, which I loved! Something most people who know me would never guess - I like Marvel movies.
