Eat, Drink & Be Healthy Dinner Party

A few weeks ago, I had this random idea to host a dinner party that featured healthy foods and people that I don't know super well. Sounds fun, right? Well, it was!!

I emailed a few girls I know from different aspects of my life - fitness classes I used to take, my old job, etc. I picked girls that I don't hang out with regularly, girls that I know are interested in healthy living and girls that I wanted to get to know better. Luckily, they all responded positively about my dinner party idea.

I wanted to do a potluck party, because it would give us all a chance to try new dishes, share recipes and get new meal ideas. Beyond that, I didn't really have any expectations!

I told everyone to bring their signature healthy dish - something they love to make or something their friends or family love to eat.

Our first dinner party was intimate - Sara, Jill and I. But the girls did not disappoint with their healthy dishes!

To make things festive, I made my signature cocktail - champagne, a splash of vodka and a splash of juice. I used POM Antioxidant Super Tea in Pomegranate Lychee Green Tea as my mixer. It was delish! 

I also served an appetizer - Trader Joe's Roasted Red Pepper and Artichoke Tapenade and gouda with whole wheat crackers.

Sara brought Sweet Potato Buffalo Chicken Casserole, which was AMAZING! This is something I will make again, and the BF will totally love this. 

I made zucchini noodles and homemade kale pesto (recipe below).

Jill said baking is her specialty so she brought healthy almond butter cookies, which were sooooooo good!

To get the conversation going, I came up with a fun health- and fitness-themed game. I came up with 20 fun questions that we all had to answer. Some were goofy, some were more serious, but it got us talking about all kinds of random things!

It was such a fun night, and I really enjoyed getting to know Jill and Sara better. I'm definitely planning to have another healthy dinner party!

Zucchini Noodles with Kale Pesto

Julienne peel three or four zucchinis. Place zucchini noodles in a colander and salt. Don't be afraid to use a lot of salt. This will allow the water to come out. Let sit for at least 20 minutes. Rinse, then squeeze out all the excess water. Add olive oil or coconut oil to a skillet and heat on medium. Heat the zucchini, stirring occasionally, until warm and tender. (You can also eat zucchini noodles raw!)

1 1/2 cups basil

1/2 cup kale

1/2 cup pine nuts

1/2 cup Parmesan cheese

2 garlic cloves

1/4 tsp. salt

1/4 cup olive oil

Add basil, kale, garlic and pine nuts to food processor and pulse. Add Parmesan cheese and salt. Pulse again until combined. Pour in olive oil while the food processor is running. Blend until pesto is a uniform color.

Taste and add more garlic, salt, cheese, etc. as needed.
