The Best Healthy(ish) Nachos Ever

One of the things I learned about the BF when we moved in together a few months ago is that he can make some delicious nachos. You'd think I would have known that about him after four years of dating!

We had leftover chicken taco ingredients - shredded chicken, black refried beans, colby jack cheese, avocado, Mexican rice and sour cream. 

Neither of us felt like cooking one night, and the BF threw together the most amazing nachos I've ever eaten. Like, better than the gooey, cheesy nachos from a dive bar. 

I was impressed.

I'm always super impressed when leftovers become something just as or even more delicious than the original meal!

To make the shredded chicken, he either uses a roast chicken from the store or he cooks chicken breasts in chicken stock in a crock pot all day. He then shreds the chicken and sautees it with spices, onions, green peppers and jalapenos.

To make the nachos, he layers tortilla chips, chicken, black refried beans, Mexican rice and colby jack cheese. The nachos are topped with mashed avocado, tomatoes and sour cream or plain Greek yogurt. Yum! I call them "healthy(ish)" because they're still nachos and pretty cheesy. 

We've always used regular tortilla chips or whole grain tortilla chips, as you can see in the photo above. But as soon as my local Hy-Vee gave me the Food Should Taste Good Sweet Potato Tortilla Chips, I knew they could take our nachos up a notch!

These tortilla chips are delicious and they're made with just a handful of ingredients. They are all natural, gluten-free, vegan and made without artificial colors, flavors or preservatives. I love the flavor of these chips. They have subtle sweetness, but still have that tortilla chip taste. 

I ate one of these mini bags plain, and I thought they were tasty just like that!

We haven't had leftover chicken taco ingredients to make my fave nachos lately, but I'm definitely having the BF make them with these sweet potato tortilla chips next time!
