Weekend Recap {Nov. 21-23}

I had such a relaxing weekend. I'm definitely going into this holiday week feeling pretty stress-free and grateful for so many things.

My weekend was filled with good food, trying new recipes, spending lots of time cuddled up on the couch and working out.

Here's how my weekend went...

Friday, Nov. 21


My mom took the BF and I out to lunch on Friday! We went to the Egg and I for breakfast for lunch. I had an egg white scramble with apple chicken sausage, spinach, mushrooms, tomatoes and gouda and a pumpkin pecan waffle. It was a lot, but I always want eggs AND waffles at breakfast restaurants!

After work, the BF and I went for a run! We decided that we're going to run the YMCA Turkey Trot on Thanksgiving, so we need to run a few times to make sure we won't die during the (most likely) freezing cold five mile run. (We haven't been running a whole lot lately)

We ran three miles, and it felt great - especially because it warmed up to the low 40's on Friday. I wore my new ProCompression socks after our run. I'm testing them out as part of an opportunity with SweatPink!

As I was stretching post-run, we decided to go out for dinner to celebrate the BF's new job. We went to Sozo.

I had the kale caesar salad topped with crab cakes, and it was amazing! I'm totally recreating this at home. 

After our fab dinner, we went home, got in our pajamas and finished the first season of Orphan Black. If you haven't watched this show, you must! It is soooooo good! 

Saturday, Nov. 22


The BF left for his weekend job in Lincoln around 5:30 a.m., and I couldn't fall back asleep. I finally got out of bed at 6:30, and made toast topped wtih almond butter, banana slices, chia seeds and shredded coconut.

My morning was spent:

  • blogging (fun posts coming up this week!)
  • taking Institute for Integrative Nutrition classes (Thinking about becoming a health coach? You can get a major discount on tuition if you enroll by Nov. 30!)
  • doing laundry

I taught a 10 a.m. Piloxing class at K-Town Shakedown, which was so great. I had a full class, everyone worked hard and I felt great after getting a good workout in. I also walked to and from the studio, so it was nice to get some fresh air.

I convinced my mom to go Old Navy with me that afternoon. I'm feeling uninspired by my fall clothes, and I wanted to pick up a few inexpensive sweaters. (I didn't want to spend too much on myself since Christmas is coming up). 

I ended up getting two sweaters (this one and this one), a black 3/4 sleeve shift dress (to wear this holiday season) and a pair of black and red polka dot tights. I was happy with my purchases.

My mom and I then enjoyed some decaf coffee with Coffee-Mate Peppermint Mocha Creamer while I looked through the Christmas stuff that I had stored at my parent's house.

The BF arrived home around 4 p.m. We caught each other up on our day, then he took a nap. 

I made Baked Butternut Squash Macaroni and Cheese for dinner. It wasn't nearly as cheesy as I expected it to be. It was good and we loved the butternut squash in it, but it wasn't amazing. 

We then started watching the last season of The Killing, another addictive show!

Sunday, Nov. 23


When I woke up at 7:30 a.m., all I could think about was doughnuts. I got right in the kitchen and started baking. I made vanilla doughnuts with espresso glaze. I had to walk to my parent's house to borrow powdered sugar to make the glaze. (I walked there a second time to deliver doughnuts once they were done.) The doughnuts ended up being good, but not super amazing. They were really dense. I think I'll use cake flour next time I make baked doughnuts.

The BF and I spent the morning drinking coffee and watching Burt's Buzz, a documentary about Burt's Bees. It was a great film. I didn't know anything about Burt or how the company was formed. I absolutely love Burt's Bees products, especially the lip balm!

The afternoon was made up of:

  • a trip to Target (I actually stuck to my list!)
  • a trip to Hy-Vee 
  • watching a cheesy Christmas movie while the BF napped (yep, I'm totally in holiday mode)
  • eating apple slices dipped in natural peanut butter with melted dark chocolate chips (game-changer)
  • reading magazines (part of my November goals)

We ended up going to a restorative yoga class at the CHI Wellness Center in the early evening. Neither of us had ever done this type of yoga before. I usually enjoy power yoga or vinyasa yoga the most, but it was nice to change things up. The restorative yoga class was basically like taking a nap for an hour! We did just a few poses and stretches, breathed deeply, got a few rubs and massages from the instructor and that was it. 

The class actually helped me set some intentions for the upcoming week and feel less stressed going into the week. 

Dinner was roasted beets, carrots, sweet potatoes and butternut squash and black bean burgers over mixed greens.
