Weekend Recap {Dec. 5-7}

After a week of non-stop headaches, my weekend was just what I needed - a mix of fun, relaxation, good workouts and being festive.

Friday, Dec. 7 - 

Friday was the fifth day in a row that I had a headache! Read more about my headache issues in my Week of Workouts post. I stayed home from work Friday to rest and recover from my head issues. I was finally feeling better late in the afternoon, which was good because I had big plans with the fam.

My parents, my brother, sister-in-law, niece, the BF and I had dinner at Old Chicago - the BF and I shared a Thai pizza (delicious!). Then we all went to Cirque du Soleil Dralion at the Viaero Event Center. The show was incredible. I'm always in awe of how athletic the performers are. One of my faves was a lady who was doing all these yoga-esque inversion poses on top of a tiny little podium. 

 It was such a great night after having a rough week. I definitely needed to get dressed up (I even curled my hair! See photo above : ) and go out and enjoy time with people I love.

Saturday, Dec. 6 -

I woke up early and had oatmeal with chia seeds, goji berries, pomegranate arils, pecans and Trader Joe's Cranberry Apple Butter. It was random, but delicious.

Then I taught three classes - Chizzel, a cardio/toning fusion class, Core and More and a water jogging class - at the CHI Wellness Center. My tank is C9 by Champion from Target. I absolutely love it!

I recovered from my classes with a smoothie made with So Delicious Coconut Milk Nog, cold coffee, Perfect Fit protein powder and ice - dessert in a glass.

The BF and I then headed to Hy-Vee to pick up groceries! I'll post a grocery haul later this week!

For lunch, the BF made his famous healthy(ish) nachos with some leftover taco ingredients. He also whipped up some guacamole.

I spent the afternoon wrapping Christmas gifts, working on my Health and Fitness Gift Guide on Pinterest (a gift guide post is coming soon!) and catching up on shows on Hulu.

While the BF made dinner, I baked a Cranberry Apple Crumble from Skinnytaste and drank wine. 

The crumble was absolutely delicious, but we didn't have any vanilla ice cream, which is a total must when eating a crumble.

Dinner was turkey burgers topped with Frank's buffalo sauce and blue cheese and roasted sweet potatoes, carrots and broccoli.

Sunday, Dec. 7

I woke up anxious to get in the kitchen and bake. Before I went to bed, I had this genius idea to make gingerbread cranberry scones. But I quickly realized that I was out of molasses, so I headed to the grocery store at 7:30 a.m. 

The scones smelled absolutely amazing while they were baking, but they came out like this...

I was so bummed. The BF and I ended up having egg sandwiches on English muffins for breakfast and munched on pieces that we tore off of that hot mess of a scone. It actually still tasted delicious. It was just a monstrosity. 

I would love to take a baking class. I get lots of ideas about things I want to bake, and I can't find recipes that are exactly what I want. When I try to bake my idea, it works out maybe 25% of the time. I need to learn the science of baking!

I redeemed myself by baking Double Chocolate Chip Cookies from Joy the Baker. The BF wanted a dessert to take to his coworkers. These cookies were absolutely delicious - soft on the inside with a slight crunch on the outside, and extra chocolatey. I think I'm going to add these to my holiday cookie list.

After hours of baking, the BF and I headed out for a run. It was pretty foggy and drizzly, but it felt good to get out and run. For lunch, I had a leftover turkey burger with spinach and guacamole and leftover roasted vegetables.

My afternoon was spent:

  • cleaning
  • doing laundry
  • blogging
  • shopping at Target (buying more than what was on my list, as usual)
  • watching cheesy Christmas movies
  • Christmas decor DIYing (I'll show you photos when I'm done!)
  • eating too many cookies (my dad also dropped off his famous oatmeal raisin cookies)

The BF was in Lincoln for his weekend job all afternoon and evening, so I threw together an easy spinach and pesto grilled cheese sandwich for dinner. 

I didn't want the weekend to end! I'm really getting into the holiday spirit and could spend all day every day baking and doing Christmas crafts. I love it.
