Grocery Haul {Dec. 6} + Meal Planning

I'm super late on posting this month's grocery haul (the BF and I went shopping on Dec. 6)! I usually post our grocery haul early in the month to share our spending from the previous month. (Read about our October spending and November's grocery haul here).

I don't know what happened. This month is just flying by!

But I still want to share our grocery haul and meal planning because we've been making some delicious meals this month! 

But first, here's our spending..

In October, we spent $427.62 on groceries. 

November's spending...

Grocery total: $546.31

Eating out/Going out total: about $230

Yikes! We splurged on a nice meal out at Sozo to celebrate the BF's new job, and the BF bought my parent's lunch at LeadBelly in Lincoln. We ate out a handful of other times - Mexican food at El Protrero, salad bar at HyVee, coffee and pastries at The Mill in Lincoln and Amigos when the BF's sister was in town.

The only out of the ordinary expense for November's groceries was that we went shopping at Trader Joe's and Whole Foods in Lincoln. We stocked up on some of our favorite products (and a few extra treats) and spent about $100. Below is our haul...

We took a lot of trips to the grocery store in November making smaller purchases. That's something we'll have to be more conscious of this month!

Now on to the food! Here's what we bought at HyVee...

Produce - cauliflower, Brussels sprouts, spinach, Swiss chard, zucchini, mushrooms, avocado, a pomegranate, bananas, organic apples and pears.

Legumes/Grains/Canned Goods - crushed Italian tomatoes, diced tomatoes, black beans, whole wheat tortillas, flour tortillas, whole wheat hamburger buns, English muffins, Blue Diamond Almond Nut-Thins (they were on sale!)

Protein - chicken breasts, ground turkey

Dairy - ricotta cheese, cheddar cheese, mozzarella cheese, feta cheese, blue cheese, eggs, butter

Other - a pre-made pizza, almond milk, pure vanilla extract

Breakfasts

Sweet Potato Oatmeal Breakfast Casserole

Gingerbread Pancakes (recipe to come later this week!)

Gingerbread Overnight Oats

Oatmeal with apple slices, pomegrates, pear slices or frozen blueberries (what I eat most mornings)

Egg sandwiches on English muffins

Lunches/Dinners

Chicken and black bean enchiladas

Slow Cooker Vegetarian Lasagna (this was delicious!)

Buffalo Turkey Burgers and roasted broccoli

Chicken breasts with roasted cauliflower

Caramelized Pear and Gorgonzola Flatbread (we used blue cheese instead and it was sooooo good!)

Harissa chicken with brown rice and naan

Roasted sweet potato, kale and quinoa salad (I make this ALL the time!)

Chopped Brussels sprouts, kale and Swiss chard salad with pears and blue cheese

Snacks

Apple slices with nut butter

smoothies

Nut Thins and hummus

bananas
