Weekend Recap {Jan. 2-4}

I'm back at work today after nearly two weeks off! My holiday break flew by and, to be honest, I'm not ready to be back at work.

I had a long list of things I wanted to accomplish during my break, and I got through just a handful of them - watching as many Christmas movies as possible, relaxing, launching my new health coaching business (!!), creating a Sweet Success newsletter (sign up here), teaching extra fitness classes, spending tons of time with my family, organizing my home office and taking time to myself.

There were some things I didn't get to, but I feel like my break was a good mix of spending time with people I care about, relaxing and being productive. Full disclosure, I was either wearing workout clothes or pajamas during my entire break. It was the best.

I'm actually feeling a bit under the weather today. This happened to me last year also. As soon as my holiday break was over and I had to go back to work, I got sick. Maybe my immunity gets weak because I drink wine and winter beers nearly every evening during my vacation!

Anyway, here's how I spent the last few days of my wonderful break...

Friday, Jan. 2 -

I spent the day watching Christmas movies and organzing our home office.

In the afternoon, my niece called and asked if I wanted to come over to Grandma and Papa's house to play games. I immediately put on my boots and walked down the street.

We ended up playing Bounce Off and Old Maid, then cuddling with Coda.

The BF and I had our usual date night - grocery shopping at HyVee. We were in desperate need of fresh produce!

We decided to skip cooking dinner, and buy some sushi, which we enjoyed with wine.

For the past couple of weeks, we've been rewatchiing Parks and Recreation so we binged watched a bunch of episodes before heading to bed.

Saturday, Jan. 3 -

I made omelets with onion, green pepper, kale, mushrooms and cheese for breakfast.

After we ate, we watched Elf while we took down our Christmas decorations. It was sad. Read my blog post about having the post-holiday blues.

We made a trip to Target to buy some cleaning supplies, organizing bins, cork boards for the office and other random stuff. I'm in total organization mode!

For lunch, I had quinoa, black beans, onion, kale and homemade pesto caesar dressing. I also had a Kombucha. I'm getting back to eating healthier now that the holidays are over!

The BF took a nap in the afternoon, so I watched a rom com and ate air popped organic popcorn with sea salt and olive oil.

For dinner, the BF made turkey burgers, baked potatoes and corn. I had my burger over greens.

After dinner, we got back to our Parks and Rec marathon!

Sunday, Jan. 4 -

I slept in until nearly 8 a.m. Getting up early for work is going to be hard this week! During my vacation, I just kept sleeping later and later every day.

I made the BF and I waffles using Hodgson Mills Multi-Grain Buttermilk Pancake Mix. They weren't super crispy, but they were still good. I topped mine with pomegranate seeds, almond butter and pure maple syrup.

Later in the morning, I organized our kitchen pantry, made my apple cider vinegar drinks for the week and made chocolate peppermint ice cream (inspired by the candy cane Blizzard from DQ).

For lunch, I had leftover quinoa, kale and black beans and a turkey burger.

I then put up my vision board in the office! our office is coming together.

For dinner, we had chicken marsala from the SkinnyTaste Cookbook and some pasta. I won the Skinnytaste book from the Fit Bottomed Girls, and this is the first recipe I made. It turned out really well, and it felt like it was a fancy meal even though it wasn't super hard.

We ended the night with some candy cane ice cream. It was the perfect way to end my vacation. Now back to reality!
