Weekend Recap {Jan. 30 - Feb. 1} - Celebrating the BF's birthday + getting snowed in

What a crazy weekend! The BF and I went to Lincoln to celebrate his birthday, and the trip didn't turn out exactly as planned.

But we made the most of it, embraced the unexpected and had a great time.

Here's what happened...

Friday, Jan. 30 -

After work, the BF and I decided to go out for dinner and a movie. We went to Ruby Tuesdays because I thought they would have lots of options for my restrictions with my elimination diet. But they didn't have anything!! I got a salad at the salad bar and ate spaghetti squash and a grilled chicken breast. Blah!


By the time we finished dinner, we were both super tired. Neither of us slept well Thursday night. So we stopped at the Red Box and got This is Where I Leave You to watch at home. Both of us read the book a few months ago. I liked the movie, but the BF thought it was just OK.

Saturday, Jan. 31 -


The BF and I slept in. I made breakfast quinoa with bananas and pomegranate seeds.

After a morning of laundry, dishes, blogging, etc., the BF and I headed to Lincoln for a fun birthday weekend. When we arrived in Lincoln, I dropped the BF off in the Haymarket. He worked just a few hours for the promotions company he works for on the weekends.

While he worked, I checked into our hotel then did a little shopping. I stopped at Trader Joe's.


I was really hungry because I only had pumpkin seeds and a banana for lunch, so I bought a whole bunch of stuff I can't even eat right now on my elimination diet. I did, however, buy some fresh juice to sip on. It was delicious!


I also went to Sephora and I made an unplanned stop in Forever 21. I picked up an amazing dress, which I ended up wearing out for the BF's birthday dinner.


We stayed at Hyatt Place in the Haymarket. Our room was modern and pretty, and the hotel was in the perfect location.



We enjoyed some wine before heading out for dinner. My first glass of wine in three weeks! I'm so happy my elimination diet is nearing its end.


I had to get a photo of my new dress!


And we only had to walk a few blocks to Blue Sushi Sake Grill for dinner, which was perfect since it was snowing and the roads were a sloppy mess.


We had some delicious calamari and sushi.


I had to skip the soy sauce because I'm still on my elimination diet. I reintroduced wine Saturday, but I also had some tempura, which has gluten. So I technically added two things on Saturday. Oops. It was worth it for the sushi.


After dinner, we went to the Starlight Lounge for drinks.


It was such a fun night. The BF and I had a great time celebrating his special day!

Sunday, Feb. 1 -

We slept in, then grabbed breakfast at the hotel. I had breakfast sausage, potatoes, fresh fruit and decaf coffee. Then we got ready and headed out of town.

But as soon as we got on the interstate, we realized we wouldn't get very far. We immediately turned around and went back to Lincoln. The interstate was super icy and there was little visibility with all the blowing snow. We decided to spend a few more hours in Lincoln and wait for the roads to clear.

So we went to Whole Foods.


I didn't really need anything, but I found some things to buy, of course.


I've been thinking about buying Vega protein powder, so I bought some sample packs to test it out.


Important life lesson: Do not leave kombucha in your car when it is freezing outside. It will freeze, explode and your car will smell like vinegar.


After Whole Foods, we had lunch at Tom + Chee, a grilled cheese and tomato soup restaurant downtown. I had the Turkey + Pesto Grilled Cheese Sandwich on gluten-free bread and Creamy Tomato Basil Soup. Everything was delicious!


After lunch, we went to a coffee shop to decide what to do next. After checking the weather and road conditions, we decided to get a hotel and stay another night in Lincoln.


We went back to the Hyatt because we thought it would make it easy to walk somewhere for dinner. We spent the afternoon laying in bed, drinking tea and watching movies. It was an unexpected way to spend the afternoon, but it was incredibly relaxing and wonderful. It was perfect timing because my Sweet Success Self-Love February kicked off Sunday, and I challenged myself and you to practice self-care every day for an entire week!


After watching the first half of the Super Bowl in our hotel room, we walked to Lazlo's for dinner. I had the quinoa burger and sweet potato fries. They have the best sweet potato fries!


We got back to the hotel in time to watch most of the second half of the game. And by watch, I mean look at Instagram until the commercials come on, then watch. I seriously think lounging in bed in pajamas drinking wine is the best way to watch sports shows.

We didn't make it home until 2 p.m. today!!! The roads were still pretty icy, but we made it home safely. Luckily, classes were cancelled at the university, so I didn't have to go to work today anyway!

I believe everything happens for a reason, and I think both the BF and I needed a little getaway to relax.
