Grocery Haul + Meal Plan {Week of Feb. 9-15}

I haven't posted a grocery haul in a long time because I spent most of January on my elimination diet, and grocery shopping wasn't that fun. Most of my grocery hauls were produce, seeds, rice and rice milk (ick!).

But my elimination diet is over! (I'll post a recap soon) I'm back to eating like my old self (although I haven't reintroduced coffee and I've only had sugar for the first time this week. My sugar was in the form of Justin's Vanilla Almond Butter. To. Die. For.)

So I thought I would share my recent grocery haul and meal plan! I haven't kept track of our grocery spending for a few months. I got off track during the holidays. But I'll get back to it this month and share our grocery budget for February early in March.

Produce: organic greens, organic apples, onions, kiwis (on super sale!), red and green peppers, avocado, Brussels sprouts, a turnip and a cucumber.

Pantry: We did a major stock up of canned goods! chickpeas, kidney beans, black beans, crushed tomatoes, diced tomatoes, refried black beans and chicken broth.

My faves: plain Greek yogurt, honey, dates, natural peanut butter and goji berries

Other items not pictured: whole wheat tortillas, sour cream, cereals (for the BF), shredded colby jack cheese, swiss cheese, ground turkey and a whole chicken.

HyVee has an amazing selection of natural body care products. I know it's super weird to buy your beauty products at a grocery store, but their selection is bigger than the natural beauty aisle at Target! They sell tons of great brands. So I picked up this Kiss My Face Natural Active Life Deodorant. I've been using it for most of the week, and it's been great. I've been smelling fresh through all of my workouts. I usually use LaVanilla The Healthy Deodorant, which I love. But it's more expensive than the Kiss My Face.

Here is our meal plan this week:

Monday: Mexican lasagna, salad

Tuesday: buffalo blue cheese turkey burgers, roasted sweet potatoes, salad

Wednesday: soba noodles with chicken and peanut sauce (from the Runner's World Cookbook)

Thursday: cauliflower grilled cheese sandwiches or leftovers, salad

Friday: out in Omaha

Saturday: turkey meatball Italian wedding soup, salad

Sunday: wing it

Last weekend, I did a bit of meal prep and cooked the whole chicken we bought in the slow cooker. We used the chicken in the Mexican Lasagna and the Soba Noodles with Chicken. I've also been putting the chicken on salads for lunches. Cooking the chicken ahead of time is such an amazing time saver!

I'm still planning on making fresh juice sometime this week. I'll probably get to it Saturday. That's when I'll use the cucumber, some apples and a few kiwis. I'll also throw in some kale, ginger and carrots that I already had.

Do you meal plan? What's your process? Do you find it helpful for staying healthy?
