Weekend Recap {Feb. 13-15} - Valentine's Day

I hope you had a wonderful Valentine's Day weekend!

My weekend started with a quick and eventful road trip to Omaha and was followed up with lots of relaxing.

Friday, Feb. 13 -

The BF and I left work early to drive to Omaha.

We celebrated Valentine's Day early and went to Modern Love for dinner. I've been wanting to try this restaurant forever! It's a fancy vegan comfort food restaurant. We didn't have a reservation, but we got right in.


We ordered the Shiitake Tempura as an appetizer. It was served with wasabi aioli and red cabbage slaw. So good!

I ordered the Beet Burger, which was topped with cashew cheese, avocado, romaine and tomato and served with a tarragon potato salad. It was delicious!

The BF had Chana Masala, which was a chickpea eggplant curry over rice. I loved this (and so did the BF).


We also ordered a slice of Chocolate Pecan Pie topped with Whipped Coconut Cream. I'll be real, the BF only took one bite and I ate the rest! It was sooooo good!


After dinner, we went to the Slowdown to see Sleater Kinney. The show was amazing. Lizzo opened the show, and she was incredible!


I wore heels to dinner, but I had to change into flats for the show. I can't rock heels like I used to. But I did get to wear my blue plaid tights! (This was a truck stop selfie on our way to Omaha - I didn't wear my sunnies to the show).


The BF and I drove home after the show, so we didn't get home until 3 a.m.!!!!

Saturday, Feb. 14

Happy Valentine's Day! I woke up at 7:45 a.m. feeling absolutely exhausted. We drove home the night before because we had plans to volunteer at the Kearney Literacy Council Book Sale at 9 a.m. I know, not the greatest plan. But I'm on the Literacy Council board and I love volunteering at the book sale every year.


This year, I only came home with a few books! I got two books for my niece Brynn - the first Babysitter's Club book (score!) and Runaway Ralph by Beverly Cleary. I got myself a cheesy chick lit book for summer - Tales from the Yoga Studio - and a vintage travel guide to Yellowstone and Grand Teton National Parks (the BF and I are planning a trip there!).


I didn't eat breakfast before heading to the sale. I wasn't hungry because I ate some barbeque World Peas at about 2 a.m. to help me stay awake. Luckily, the BF had bought us tickets to the Kiwanis Pancake Feed, which was at the same location as the book sale.


Later, we took my mom to lunch for her birthday. Yes, my mom's birthday is on Valentine's Day! We went to Bico's Cafe, and I had a vegetable sandwich with eggplant, mushrooms, peppers, onion, feta and mozzarella.

The BF and I were so so tired, so we went home, put on our comfy clothes and curled up on the couch. We watched the movie Bottle Shock, which is about the early days of Califlornia wine making. It was good!


The BF and I don't usually exchange VDay gifts, but I had a photo from my cousin Kristi's wedding framed for the BF. (Remember when I went to Atlanta last summer) This is one of my fave photos of us!

After a very very lazy afternoon, we made a trip to HyVee to pick up our Valentine's Day goodies.


Pizza, wine and chocolate cake. Mmmmmm. The perfect low key way to celebrate VDay.

Sunday, Feb. 15


We slept in late, then I made a vegetable frittata with red and green peppers, onion, mushrooms, spinach, cheddar, turkey bacon and parmigiano reggiano. I've been into making frittatas on Sundays because there are leftovers that work for breakfasts during the week! I also had Ezekiel bread toasted with butter.


We also had plain Greek yogurt sweetened with honey and topped with kiwi and apples.

Most of the day was spent relaxing. We started watching a new series - Top of the Lake. It's so good!! It's like the New Zealand version of The Killing. So if you like The Killing, you will like this show!

I was somewhat productive on Sunday - I wrote a few blog posts, did laundry, did my meal planning for the week, did yoga and did dishes.


For dinner, the BF made Italian Wedding Soup with Turkey Meatballs. I saw Mario Batali make it on the Chew, and I realized I've never had Italian Wedding Soup because it's always made with beef or pork. It was absolutely delicious! We enjoyed our soup while we watched the SNL 40th Anniversary Special.

We also had brownies for dessert. Ever since having that chocolate pecan pie on Friday night, my sweet tooth has been insane! I didn't have sugar for over a month during my elimination diet and after one sugary dessert, all I crave is sugar and carbs! I'm totally detoxing from sugar this week.
