Weekend Recap {March 6-8}

Happy Monday! How was your weekend!

My weekend flew by! But the weather was beautiful all weekend, so I spent lots of time outside. Spring is finally coming! By the end of winter, I start to feel unmotivated and uninspired. The cold and dreary days start to get to me. So I am extremely grateful for warmer days!

Did you remember to turn your clock forward? I felt pretty groggy Sunday morning, but I'm feel more energized today. I even got up and went to the 5:30 a.m. BodyPump class!

Here's how the weekend went...

Friday, March 6


I went to BodyPump at 5:30 a.m.!! I am not good about getting up early to workout. But it's really the only time that I can do my own workouts since I teach fitness classes in the evenings. So I'm trying!


I left work early and got my hair cut and colored! My stylist gave me some curls since I don't usually style my hair. I usually let it air dry and go wavy.

The BF and I then drove to Grand Island to watch his nephew's flag football game. Cute!


We had dinner at Wasabi Bistro (our fave!). We had garlic edamame.


Then lots of delicious sushi rolls. I also had hot sake. Amazing.

Saturday, March 7


Breakfast was pre-running fuel - Ezekiel toast with almond butter, banana slices and chia seeds.

I spent the morning blogging. I have some fun posts for you this week! I also had a bit of coffee. Like, real caffeinated coffee! I haven't had caffeine in about two months, but I thought it would help boost my run.

About 30 minutes before my run, I ate a few Pre-Workout Energy Balls.


The BF and I ran 7 miles! I was a little sore from Friday's BodyPump class and this was the first run for the BF in awhile because he was sick, so we took it slow. Luckily, the weather was absolutely amazing!


Post-run his and hers smoothies. His = almond milk, frozen blueberries, 1/2 banana, frozen strawberries, pineapple, kale, vanilla whey protein powder and Nutri Bullet Superfood Supergreens. Hers = coconut water, kale, frozen blueberries, 1/2 banana, Vega Sport Vanilla Protein powder and Nultri Bullet Superfood Supergreens.


I somehow had a burst of energy after running, so I made green juice with kale, apples, ginger, carrot, cucumber and pineapple. I make a big batch of juice and store it in my VacuCraft Vacuum Seal Juice Container. I love this thing! I don't have time to make juice every day, so this allows me to keep juice fresh for a few days!

For lunch, I had a leftover black bean burger on top of brown rice and mixed greens topped with blue cheese and buffalo sauce.


I met a health coaching client at Chapman Swifts Coffee House. I had an iced decaf coconut milk latte, and we sat outside! Did I mention that the weather was amazing? It was in the 60's, sunny and wonderful. I am so over winter!


Before dinner, I put together a cheese platter with gouda, swiss and herb havarti with Blue Diamond Almond Nut-Thins and melba crackers. I have a slate cheese board. We also tried the Zip Line Kolsch. It was good!


Dinner was a grilled turkey burger and a baked potato topped with plain Greek yogurt. I ended up eating half my bun. It was too much. We also had big green salads on the side.

The BF watched some basketball game (boring!), so I blogged, looked at Instagram and read magazines.

Sunday, March 8

I woke up super tired at 7:50 a.m. So I laid on the couch and read, then went back to bed to read. I ended up sleeping for another 20 minutes or so.


When I finally felt ready to get up, I made avocado toast topped wtih eggs, red pepper flakes, pink himalayan salt and black pepper.


I spent the morning making snack balls! These are my new obsession! I've been addicted to these ever since I made my Pre-Workout Energy Bites. I ended up making Cashew Coconut Balls, Peanut Butter Chocolate Chip Cookie Dough Bites and Superfood Cookie Dough. They were all delicious! I gave about half of them to my mom, so she would have some snacks for the week.


The BF and I spent the afternoon exploring Fort Kearny! Although I grew up here, I had never been there! It was interesting!

It was a bit windy and chilly, but we did lots of walking along the trails to get warmed up. I'm excited to go back when everything is green!


I did a little yoga on the bridge over the Platte River.


On our way home, we stopped for lunch at Qdoba. I got my fave - naked vegetable burrito topped with guac. I've been craving avocados!

For dinner, the BF and I went to the International Food Festival at the University of Nebraska at Kearney (where I work).


Unfortunately, at 6 p.m. there wasn't much food left. I had some chicken and pineapple skewers from the Bahamas, Chinese potatoes and some Mexican candies. I also tried a bite of chicken curry from Nepal off the BF's plate.

I had a bowl of Mom's Best Cereal shredded wheat after we got home.

Now it's the start of a new week! What are your goals this week? I want to get caught up on my #JourneyToHandstand yoga challenge! I'm a little behind!
