Weekend Recap {March 27-29}

How was your weekend? I had a wonderful three day weekend! I spent time with people I love, I ate delicious food, I ran a long long way and I spent a little bit of time pampering myself.

I took a little break from being productive this weekend for some much needed rest after a week of feeling run down. Read more in my Week of Workouts post.

Here's how the weekend went...

Friday, March 27 -

I took Friday off of work to hang out with my niece, Brynn, during her spring break! She came over in the morning, and we started our day by playing school. She was the teacher (as always) and taught me facts about Yellowstone (she saw our Yellowstone travel guide sitting on our coffee table).

We had Panera for lunch. I ordered the Quinoa Lentil Bowl with Chicken.

Then we went to the nail salon. I got a pedi and she got a mani (she just had her toes done recently).

My nails were done in OPI My Chihuahua Bites.

Fro yo was next.

Back at home, we relaxed and did some coloring in an amazingly intricate coloring book my grandma (Brynn's great grandma) got Brynn for her birthday.

We also did some crafts with sticky foam shapes and letters.

My parents came over for dinner - spaghetti with meatballs, garlic bread and salads. I used a mix of whole wheat pasta and veggie pasta.

Brynn then decided she wanted to stay the night. After more coloring, we cuddled on the couch watching Labrynth until it was time for bed. She is my favorite.

Saturday, March 28 -

I made an emergency banana run early in the morning. It was a long run day, so we NEEDED bananas. I also picked up some whole wheat bagels, which I haven't had forever (perfect pre-run fuel). For breakfast, we had bagels with natural peanut butter topped with banana slices and honey.

I walked Brynn to my parent's house around 10 a.m., so the BF and I could get ready to go running. We had a 9-miler on the schedule. I actually felt pretty good (besides tight hamstrings) for most of the run. We ran out to Cottonmill Park and turned around at 4.5 miles. I ate a Chocolate Outrage Gu slowly between 4.5 and 5.5 miles. I felt strong up until the last quarter of a mile. I felt like all my energy drained from my body, but the BF kept me going to the end.

I recovered with Vega Sport Recovery Accelerator...

And I split a smoothie with the BF. It was made with almond milk, kale, blueberries, strawberries, peaches, cranberries, raspberries (one of our smoothie packs), Vega Sport Vanilla Protein Powder and Nutribullet Superfood Supergreens.

For lunch, I had a turkey burger topped with 1/4 an avocado, plain Greek yogurt and red pepper flakes.

My mom picked me up and we went to Herberger's to take advantage of their Goodwill sale. I bought some face powder from Clinique and I randomly found some Calvin Klein shorts that will be perfect for summer hiking.

Then we saw Cinderella at the theater. It was a really beautiful, heartbreaking and magical movie. I loved the theme of living courageously, with kindness and believing in magic.

At home, I had an apple with melted almond butter and coconut butter. Mmmmmm... And a few Blue Diamond Artisan Nut-Thins. Long run day = eating all the food.

Our friend Russanne drove to town from Hastings to have dinner and drinks with us.

We went to Flippin Sweet for pizza and beer. Each of us ordered a 20" pizza so we'd have lots of leftovers. I'm sure everything thought we were big eaters. Oh well. I also had a Breckenridge Vanilla Porter and a Shiner.

Sunday, March 29 -

I woke up with a headache because I had two beers Saturday night and I'm old. We were out of eggs, so the BF and I decided we couldn't make breakfast at home. We went to the Breakfast Cart, a little local spot, and I had two eggs and the most amazing crispy on the outside fluffy on the inside waffles topped with strawberries.

We went home and got right back in our pajamas and watched a million episodes of the Unbreakable Kimmy Schmidt, which is hilarious and adorable.

The BF took a nap while I meal planned for the week. Then we spent way too much time watching Broad City before peeling ourselves off the couch to go to HyVee for groceries.

After shopping, I finally got a wave of motivation and I did some meal prep for the week. I'll be honest, I don't meal prep consistently. My meal prep usually consists of making my apple cider vinegar drinks and making some energy balls. But I got my stuff together this weekend!

I made my apple cider vinegar drinks, overnight protein oats (I'll share the recipe later this week), breakfast turkey sausage, quinoa, lentils and sauteed chopped Brussels sprouts, asparagus and onions.

In two storage containers, I put 1/2 cup quinoa, 1/2 cup lentils and the sauteed veggies. I'll eat them mixed with greens, leftover grilled chicken and pesto or a tahini Dijon dressing that I'll make. I'll use the breakfast sausage for morning egg scrambles or omelets.

For dinner, we had grilled chicken, sweet potato fries and salads.

We ended our Sunday night with a little more relaxing.
