Weekend Recap {April 17-19}

How was your weekend?

The BF and I made a quick trip to Colorado over the weekend! It was pretty low key, but it was nice to get out of town for a couple of days. We drove back this morning, and I'm getting caught back up on life!

Friday, April 17

After work, I did laundry, organized the house and did dishes. When I'm leaving town, I get a little crazy about having a clean house to come home to (even if I'll only be gone for a day or two).

I also had the BF take photos of all of me wearing all of my StitchFix outfits. There were lots of photos with fingers in them or photos of me with my eyes closed ; ) But he did take some good photos and I'll share what I kept and what I sent back later this week.

For dinner, we had vegetable stir fry with rice and scrambled eggs. I mixed this all together and it was like a veggie fried rice. So good.

We had a pineapple, a couple of apples and an orange that needed to be eaten, so I made some fresh juice.

Saturday, April 18

The BF and I got up early and immediately started getting ready for our long run. I had gluten-free toast topped with peanut butter, banana slices and honey.

I also drank a Vega Pre-Workout Energizer.

Then we ran! We ran 11 miles - our longest run of our half-marathon training. The run was OK. My hamstrings are still bothering me and they felt really tight during the entire run.

I can usually place on my palms on the bottom of my feet in a forward fold...not after 11 miles!

The BF and I shared a smoothie with Vega Sport Vanilla Protein, almond milk, coconut water, banana, blueberries, strawberries, pineapple and kale.

After showers, getting ready and packing (mostly healthy travel snacks!) and lunch (leftover turkey burger over greens + a side of blueberries), we drove to Denver. The BF bought tickets to see the Replacements, his favorite band, so we took a quick trip to Colorado.

My fave spot to stop on the way to Denver is Dunkin Donuts in North Platte. Maple doughnut and chocolate cake doughnut for the win! The perfect post-11 mile run treat!

Plus iced coffee for the road.

When we arrived in Denver, we immediately went to G's Burrito Grill and Bar, a place we always go when we stay at the BF's friend Tyler's house in Westminster. I had two fish tacos and two black bean avocado tacos and a margarita. Yum!

Sunday, April 19

The BF and I woke up early and went out to find breakfast. Westminster is very suburban so there are lots of chain restaurants, but we ended up at Panera. I had the Power Oatmeal Almond Quinoa Bowl and an Iced Chai Tea Latte.

As we ate breakfast, I noticed a bunch of women lined up outside of the nearby Target. I remembered that it was Lilly Pulitzer for Target day! After breakfast, we walked to Target to check it out. We got there about 15 minutes after Target opened and ALL the Lilly Pulitzer stuff was gone! I was bummed because I had my eye on a beachy maxi dress.

Luckily, my mom stopped by our local Target and picked up two dresses for me!

We didn't have many plans for the day, so we went to Cosco! We bought a new cooler for our upcoming camping trip in Yellowstone and some healthy foods in bulk! This was only my second Cosco trip, and I'm totally in love with that place.

We also stopped at Dick's Sporting Goods, and I bought a new tank for the Lincoln Half-Marathon in two weeks!

The BF and I were starving for lunch, and we randomly went to Quaker Steak and Lube...I told you Westminster is full of chain restaurants! I had a buffalo chicken and blue cheese wrap, which was actually good. The rest of the day was low key. I spent the afternoon reading.

I had done tons of research on downtown Denver restaurants (Root Down and Linger were my top picks), but when we left for the show we weren't hungry. So we skipped dinner and went right to the Fillmore Auditorium.

The show was a lot of fun, and the BF was really happy seeing his band.

We had late night drive thru fast food, which was disgusting and a terrible idea.

This morning, I enjoyed some coffee on the deck. I couldn't see the mountains because it was too cloudy, but I enjoyed this beautiful tree.

We drove back to Nebraska today, and got back in the early afternoon. I'm glad to be home and back to healthy eating! Even just a day of indulgent eats makes me feel off!
