Weekend Recap {May 29-31}

We're back at the beginning of another week. I wish weekends could last forever.

The weather was finally late spring-like, so the BF and I spent lots of time outside. We went to the farmer's market, we planted our garden and we went trail running/hiking. It was nice to have a weekend without rain!

Friday, May 29

After work, I made some orange coconut macaroons. I wanted to create a dessert recipe for my clean eating challenge group. I also tried out my brand new Canon Rebel to photograph the macaroons!

When the BF got home, we went to Cunningham's Journal for dinner and drinks with our friend, Will. I ordered a Shiner Bock, but it tasted old and flat (I think they specialize in Bud Light). BTW, I have still been enjoying the occasional beer or glass of wine on my clean eating challenge. You have to make it work for you!

I had a salad and a buffalo chicken wrap. It wasn't amazing and it wasn't clean eating challenge approved. There wasn't a lot of healthy food to choose from besides salads. But bar salads are never good, and I just can't pay money for a bowl of iceberg lettuce. So I ate my wrap, and got back on track Saturday morning.

Saturday, May 30

Breakfast was whole wheat chia flax toast, banana slices, chia seeds and honey. We were planning to run, so I was fueling up with my usual pre-run breakfast.

We spent the morning procrastinating our run. First, we went to the farmer's market. There wasn't much there yet - mostly lettuce, radishes, honeys, jams and homemade baked goods. We bought some asparagus.

The procrastination continued...The BF watched some punk documentaries while I created some recipes for upcoming blog posts. I'm actually planning ahead and creating some content for when I'll be in Yellowstone!

Soon it was noon, and we decided to postphone our run until Sunday. For lunch, I had a salad with spinach, red cabbage, asparagus, Brussels sprouts, chickpeas, sunflower seeds, feta and homemade balsamic vinaigrette.

Then we set up our new tent in the backyard! We wanted to test it out before we go to Yellowstone in a couple of weeks. Soon, I'll share all the gear we're taking camping.

After a trip to get the BF's oil changed in his truck and a Target stop (I bought an organizer for my bathroom drawer! I'm in organization mode since our landlords are doing some remodeling in our bathroom), the BF headed out for a new record store opening and disc golf. I went through all my bathroom stuff. Purging and organizing makes me feel at peace.

I ate some chips and salsa. These chips are amazing and are made with just a few ingredients!

Then I started our garden! I had absolutely no idea what I was doing but after a beer and a couple of hours, our produce was planted. The BF got home just in time to help me put up the fence to keep the bunnies out. Our little farm contains tomatoes, cucumbers, green peppers, hot peppers, kale, beets, basil and thyme.

Around 9 a.m., we finally finished gardening and we threw dinner together. The BF grilled turkey burgers and vegetables - green beans, asparagus, Brussels sprouts, zucchini, yellow squash and onions. I made a quinoa, amaranth, millet blend.

We ended the night with an episode of Wayward Pines. Have you watched this show? It's sooooo good!

Sunday, May 31

Breakfast was the usual pre-run fuel - whole wheat toast with almond butter, banana slices, honey and chia seeds. I also made a homemade latte by blending coffee, coconut oil, pure maple syrup and almond milk. It was delicious.

We took our coffee outside to water the garden. Then watched a few episodes of Grace and Frankie on Netflix. Lilly Tomlin is my spirit animal.

I did a Yoga Girl yoga practice. It was my first workout since Tuesday! I've been really nervous about working out since I have plantar fasciitis in my right foot. But the yoga stretches felt really good. It also felt amazing to be barefoot! I have to wear my shoes ALL the time because of PF. Check my Instagram for a little video of my yoga practice.

For lunch, I had some leftover black bean and quinoa soup topped with feta, a leftover turkey burger and some seaweed rice crackers.

Since my foot was feeling OK, the BF and I decided to go for a trail run/hike. As nervous as I am about my foot, I'm twice as nervous about the Yellowstone Half-Marathon, which is in two weeks! It's a trail run!!!! I haven't gone on a long run in about three weeks, and we haven't done as much trail running to prepare as we had hoped. We ended up doing 4.5 miles of running/hiking. It was pretty brutal, but my foot felt fine.

When we got home, I made a delicious green smoothie - almond milk, spinach, wheat grass, Vega Sport vanilla protein powder, pineapple and ice.

Then I practiced some new Piloxing choreography to see how my foot would feel while teaching. I've had a long break from teaching Piloxing because the fitness studio where I teach moved. They are back in business, so I'm back to teaching! Piloxing is a barefoot workout, but I'll have to wear my shoes because of my PF.

The BF had to leave for an out of town conference, so we grabbed a quick dinner at Runza. I veered from my clean eating and had a grilled buffalo chicken sandwich. I wasn't in the mood for a salad, and I don't love fast food salads. And I may have bought a mini chocolate shake to go. Yes, I occasionally eat something for comfort. I was feeling bummed that the BF was leaving for the week, and I wanted some chocolate. However, after not having sugar for two weeks on the clean eating challenge, I got a headache and stomach ache after eating the shake. #fail

Since the BF was gone, I got really wild and watched episodes of the Real Housewives of NYC before bed.
