Health Coach Approved Meals That Will Keep You Happy and Satisfied

After traveling for a couple of weeks in June, I came home feeling extra inspired to get back in the kitchen to make home-cooked meals.

I got back to eating some of my usual meals, but I also tried a few new recipes and whipped up some delicious new dishes that I created myself.

Keep in mind that these are examples of the healthiest foods that I eat. I eat like this most of the time, but I do enjoy cocktails, cold beer on hot summer days, a trip to the fro yo shop on occasion and pizza (oh, how I love pizza!).

Living a healthy lifestyle isn't all or nothing. The majority of my diet is made up of nutritious, healthy food, so when I have a piece of cake at a birthday party or go out for drinks with friends, I don't feel guilty. I never have to start over or get back on track.

It took me a long time to get here. I used to have A LOT of food guilt. But it's so freeing to just let go of the guilt and truly enjoy food!

Here are some of my recent eats...

Cold oats topped with berries - This isn't anything new. I eat this almost every single day for breakfast. 1/2 cup old fashioned oats, 1/2 cup unsweetened almond milk, 1 tbsp. chia seeds, 1 tsp. cinnamon, a few drops of stevia, 2 tbsp. goji berries topped with fresh berries and almond butter.


Protein pancakes topped with berries and pure maple syrup - Check out my post "My Favorite Protein Pancakes" for the pancake recipe.


Kiwi Pear Green Smoothie Bowl - I saw this recipe in the June issue of Shape Magazine. It was a mix of almond milk, kiwi, pear, tofu, spinach and lemon juice. I topped it with hemp seeds, goji berries and raspberries. After I took a few bites, I added chia seeds and some old fashioned oats for a little more crunch.


Gluten-Free Lemon Blueberry Waffles - Waffles are my favorite food! I love love love them. But I don't eat them often because, let's be real, waffles are breakfast cake. However, I had a major waffle craving the other day and made this recipe from the Minimalist Baker, and my craving was sufficiently satisfied. (I de-veganized the recipe and used eggs and butter).


Avocado toast topped with eggs - This is one of my favorite breakfasts or lunches. I prefer Ezekiel bread topped with mashed avocado, red pepper flakes, pink Himalayan salt and runny eggs. I don't always cook my eggs perfectly. These are a bit overcooked. And my eggs are never the sexy, runny eggs you see on Instagram. But this always tastes delicious.


Kale and spinach salad with blueberries and hemp seeds - I was craving a simple salad, so I massaged kale with grapeseed oil, added spinach, lemon juice, hemp seeds and blueberries and voila! I also ate a naked turkey burger with this salad.


Kale, raspberry and goat cheese salad - When I was in Denver for FitBloggin, I went to Euclid Hall for a lunch with the California Avocado Commission. The chef made this amazing salad with king trumpet mushrooms, goat cheese, orange, watercress, endive and orange verjus vinaigrette. This salad is nothing like that, but I was reminded of how much I love goat cheese. So when I got home from Denver, I immediately bought goat cheese. I love the salty cheese with the sweet and tart raspberries! I massaged kale with olive oil then added sunflower seeds, raspberries and goat cheese. I ate this alongside a grilled chicken breast.


Kale, lentil and beet salad with goat cheese - This was so so delicious and filling. This is a salad you can eat on its own and feel full. I massaged kale with grapeseed oil, then added spinach, roasted sweet potatoes and beets, lentils and goat cheese. I topped it with my spirulina vinaigrette dressing.


Black bean and rice Mexi-bowl - I had this for lunch one day and it was absolutely delicious. I reheated leftover brown rice with a bit of water, and sautéed onions, red and orange peppers, mushrooms and black beans with chipotle powder and cumin. I topped my rice with the veggie and bean mixture, then topped that with guacamole and chopped green onions. Too good!


Grilled chicken with basil chimichurri - I tried to cut my chicken so it looked fancy for the photo, but it just sort of shredded and looked terrible. But this was delicious. The BF and I already have a lot of basil growing in our garden, and I recently found this recipe in the June Better Homes and Gardens Magazine (which I never subscribed to but have been getting for a long time). The chimichurri is simply olive oil, basil, red onion, garlic, red wine vinegar and lemon juice that I put in the blender while the BF grilled the chicken. So easy! I also had a big salad with this chicken dish.


Yogurt-curry chicken kabobs - I prepared these kabobs and then waited for the BF to get home from work to grill them. But he ended up coming home super late, so I threw them in the oven. The chicken was a bit overcooked, but the yogurt-curry flavor was delicious. I found this recipe in the June issue of Shape Magazine. The marinade was Greek yogurt, curry, cumin, ginger, garlic, chicken stock, salt and pepper.

I find recipe inspiration on health blogs, health magazines and Pinterest mostly. Sometimes I just get inspired by something I've eaten at a restaurant and I try to recreate it at home.
