Happy Monday! Were you able to relax and recharge this weekend?

I spent plenty of time in the pool and made time for reading this weekend. I also finished up my last Institute for Integrative Nutrition classes. I'm actually sad that my classes are over, but I'm super thrilled because I'm graduating this week! Time to celebrate!

Friday, July 10

I got to leave work early because there was asbestos removal going on down the hall from my office. I took advantage of the few extra hours at home by cleaning, doing dishes, blogging, sending out a Sweet Success Newsletter and working on my Institute for Integrative Nutrition classes.

Then I ran to the store for ingredients to make homemade pizza. I made the dough and...nothing. It didn't rise! So I made a margarita.

When the BF got home from work, we decided to go out for dinner. I changed into my summery orange maxi (a Target find from last summer).

We decided on Old Chicago because of their beer selection. I had a chicken and artichoke pizza with pesto sauce. It was delicious.

Back at home, I saw that Prana was having a big 40% off sale. I checked to see if the swimsuit I've been eyeing was on sale. It was!! I ordered the Lani Bottom and Isla Top in Fuchsia Tribe and the Skye Maxi Dress I've had on my wish list all summer.

Saturday, July 11

I woke up super early (6 a.m.) and started the day with oil pulling, meditation and more IIN class work. For breakfast, I toasted frozen gluten-free waffles and topped them with natural peanut butter, chia seeds, hemp seeds, flax seeds and pure maple syrup. I also had a side of fruit.

The BF and I went to the farmer's market.

We bought carrots, beets, red potatoes and green beans.

The BF wanted to check out some garage sales, so we drove around town checking them out. We didn't buy anything, but we had fun looking at other people's junk.

I rode my bike to meet with a health coaching client at a park.

Then I made an egg and vegetable scramble with feta and toasted some English muffin bread for lunch.

I sat outside reading until I got too hot, then it was...

Pool time! I feel so lucky that my parents live a block away, and have a pool. The water was actually a bit cool because the weather was cooler the past week. So I spent a lot of time laying in the hammock reading.

After swimming, my niece, Brynn, requested a top knot - my go-to summer hairstyle. She has perfect top knot hair! And she wanted it off to the side a bit - so chic.

The BF and I picked up a pre-made pizza crust so we could use the pizza ingredients I bought the night before. We made delicious veggie pizza, then rode our bikes to the Redbox to get a movie.

We started the Imitation Game, but I fell asleep within 10 minutes. It wasn't the movie. I had just taken a warm shower and put coconut oil with lavender essential oil on my skin. I was out.

The BF woke me up around 11 p.m., and I got into bed. I couldn't go back to sleep so I looked online for natural beauty products. I researched charcoal toothpaste, but couldn't find any that were made without artificial sweeteners. I ended up buying Rose Hip Oil, Argan Oil and a tongue scraper. (I'll share a post soon on the natural beauty products I use). Nothing like half asleep online shopping!

Sunday, July 12

We didn't have much breakfast food, so I had two eggs and some English muffin bread. I also created our meal plan for the week and did some food prep for the week. I made my fave energy balls.

I also made broccoli stem pesto and massaged some kale with grapeseed oil.

Since I couldn't find charcoal toothpaste to buy, I decided to make my own! I'll share more about this in another post.

The BF and I then rode our bikes to Harmon Park for Art in the Park. It. Was. Hot. Like miserably hot. I was sweating profusely, and felt incredibly uncomfortable.

We cooled off by sharing a pink lemonade and passion fruit sno cone.

After more IIN class work, I went to the mall to check out some Sanuk Yoga Sling 2 Sandals at the sidewalk sales. I ran into my high school friend, Skye, at Art in the Park, and she and her daughter were wearing yoga sling Sanuk sandals. They looked so cute, and Skye said they were on sale. I ended up buying myself a pair...

And a pair for Brynn.

I spent the rest of the afternoon playing volleyball in the pool with my parents and Brynn.

When I got home, I made Peanut Butter Oatmeal Cookie Granola, finished my last class at IIN (so sad!) and watched the Imitation Game. It was so so incredible. Such a heartbreaking, but fascinating movie.

For dinner, BF grilled turkey burgers and beef burgers. I topped my turkey burger with broccoli stem pesto and feta. I made roasted carrots and beets and steamed green beans. The carrots were the best! I don't usually love cooked carrots, but I've never roasted whole carrots before. They were soooooooo good! This is my new fave.

We ended the night by catching up on Wayward Pines.

What was a highlight from your weekend?
