Weekend Recap {July 31-Aug. 2, 2015} - Johnson Lake Cabin Trip

The BF and I decided to get away for the weekend, and spend a couple days at a cabin at Johnson Lake.

Our friends, Russanne and Justin, invited us to stay at Justin's family's cabin. It was perfect because Johnson Lake is just a 45 minute drive. It was a nice little weekend getaway without a long road trip.

Friday, July 31

After work, the BF and I got ready to head to the lake. We took watermelon, blueberries, strawberries, tabbouleh salad, chicken sausages, turkey burgers, tortilla chips with guac ingredients, SmartPop White Cheddar Popcorn, trail mix, pistachios and beer.

We stopped for dinner at El Protrero before heading to the cabin. I had chicken tacos.

We arrived at the cabin around 10 p.m. Russanne and Justin's friends Sam and Ryan also stayed at the cabin. So we all had a few beers while hanging out for a few hours.

Saturday, Aug. 1

I woke up around 7:30 a.m., and got ready to go for a run. I hadn't run in about a month and a half. The Yellowstone Half-Marathon really shook my self-confidence, but I thought a change of scenery might reinvigorate my love of running.

I ran three miles along a hike and bike trail and on a highway along the lake. It was absolutely beautiful, the weather was cool and there was a nice breeze. It felt good to get back to running.

Everyone was up and making breakfast when I got back. I brought some plain Greek yogurt and Vega vanilla protein powder that I mixed and topped with berries. I also had two runny eggs and coffee.

It was still cool and windy, so we hung around the cabin until the weather warmed up.

We used the downtime to take selfies.

And get all lovey dovey.

Then we went out on the boat.

About an hour later, we headed back to the cabin for lunch. The BF and I made our guac.

A little glimpse of our cabin snacks.

I had a chicken sausage, chips and guac, watermelon and...

a margarita. Hey, when at the cabin!

After lunch, we headed back out on the boat. The boys went tubing.

And then we floated on the lake, listening to music, chatting and enjoying the sun.

I got a bit of a headache while on the boat. I had drank about 100 ounces of water, but the sun still got to me. When we got back to the cabin, I took some Advil, drank some water, ate some watermelon and trail mix and relaxed inside for awhile. I felt better in no time.

For dinner, I had a turkey burger, tabbouleh and grilled zucchini and yellow squash.

The BF and I checked out the sunset on the boat dock. I took a moment for a quick meditation.

Then we took a walk to get a better view of that sunset.

We spent the rest of the night on the porch chatting, laughing and having some drinks.

Sunday, Aug. 2

I woke up before everyone else and took my coffee to the boat dock. It was absolutely beautiful. I spent some time listening to the water and meditating.

When I got back to the cabin, Russanne was up so we sat on the porch talking and drinking coffee (just me) until everyone else woke up.

For breakfast, I had leftover chicken sausage, whole wheat toast topped with guacamole, two runny eggs and fresh berries.

Russanne took a few photos for me for a post I'm doing with Soybu. I thought the lake would be a perfect photoshoot location.

Then we packed up the cabin and headed home.

The BF and I lounged most of the afternoon. I worked on a few blog posts. While the BF watched a soccer game, I enjoyed the new Simply Balanced ice cream that is made with hormone-free milk from Target while I watched the Real Housewives of New York.

We had dinner with my parents. Another grill out! Almost all of our meals this weekend were made on the grill. So summer! I had leftover tabbouleh, a turkey burger topped with tomato slices, roasted orange bell pepper and onions, corn on the cob, a few potato slices and fresh berries.

It was a great weekend with good food, lots of laughs and plenty of time in the sun. I definitely feel like I'm soaking in summer!
