Weekend Recap {Aug. 7-9, 2015} - 40-mile bike ride!

I decided I needed a three-day weekend to relax and recharge a bit. I had been feeling tired and run down all of last week, so I took Friday off work to take it easy and spend time with my niece before the school year begins.

When I wasn't relaxing, I was riding my bike (40 miles!), preparing for a healthy week and health coaching.

Friday, Aug. 7


I took the day off of work so I could spent it with my niece, Brynn. She's going back to school this week, so I thought it would be fun to have a sleepover before she starts school. On Thursday, we had a spa night. We soaked our feet in my new Dr. Teal's foot bath filled with peppermint epsom salts. We put on mud masks, placed cucumbers over our eyes and drank cucumber water. And we listened to relaxing spa music. I massaged Brynn's feet and painted her toenails.


On Friday morning, I made us omelets and apple cinnamon pumpkin muffins. I swear I'm not ready for fall.


We relaxed for awhile, then decided to go to Target to buy a beach ball and a sharpie so we could make a game. I got the idea from an icebreaker I did - you write questions all over the ball, toss it back and forth and answer the questions. We used kid-friendly questions like, "If you had to live in the ocean or on the moon, which would it be?" But at Target, I ended up buying all kinds of random things for Brynn. I'm not really sure what happened.


We spent the afternoon, making the ball game, watching Annedroids on Amazon Prime, playing the ball game outside and relaxing. I dropped Brynn off at my parent's house later in the afternoon so I could go get a massage. I went to Kearney Massage and Day Spa for a Lavender Mint Massage. It was a gift from the BF for our anniversary and my graduation from the Institute for Integrative Nutrition. It was so so wonderful.


The BF and I had grilled turkey burgers, grilled veggies and Freekeh for dinner. That night, the BF drove to Hastings to play poker with his buddies. I stayed home and watched the movie Cake. It was really good, and a total tear fest.

Saturday, Aug. 8


I woke up at 5:30 a.m. to get ready to go to Hastings for the Kool-Aid Classic Bicycle Tour 40 mile bike ride. I ate oats with chia seeds, almond milk, blueberries and almond butter for breakfast. Then drove an hour to Hastings.


Russanne and I road together. Last year, we did 65 miles. But we didn't train at all this summer, so we decided to listen to our bodies and do 20 or 40 miles this year. Saturday was actually the first day I got my bike out this summer! With all the traveling we've been doing, riding my bike just hasn't happened. I did get to use my brand new riding gloves and helmet that the BF gave me for Christmas last year. He bought me clip shoes for my birthday, but I was too nervous about using them for the first time during a long ride.


During the first 10 miles I couldn't remember how to change my gears. #Fail. I'm a total newbie cyclist. At the mile 10 SAG, I asked the guy at the SAG wagon for help. He gave me a quick refresher, and I felt like a total loser. I ate a Honey Stinger Peanut Butter and Honey Bar, and we were on our way.


Russanne and I chatted away during the next 10 miles. We stopped in Roseland hoping to use the ladies room at a gas station, but it was closed. So we stretched, I ate a Honey Stinger gel and rehydrated with some SOS Rehydrate.


The next SAG was around the 30 mile mark. Russanne and I had to venture into a cornfield to pee. It was muddy and gross. They totally need porta-a-potties. I had a banana and refilled my water bottle.


The last 10 miles were rough. My quads were on fire, and my ass was killing me. But we pushed through!

I was really proud of us for finishing. And Russanne and I spent the entire ride catching up, gossiping, talking about celebs and makeup and laughing at ourselves. It was a great day spent with an amazing friend.


I took a quick shower at Russanne's, and met my parents and Brynn at Kool-Aid Days. Brynn played some games, tried some Kool-Aid and checked out the inflatables.


I was feeling a bit hangry, so we went to Papa Ray's for pizza. Post-40 mile ride carbs and cheese! I headed home after lunch, and my fam stayed and went to the Hastings Museum.

The rest of the afternoon was spent relaxing. I was exhuasted. Dinner was Tofu Pad Thai from Suwannee Thai Cuisine. It was so delicious!


After dinner, we stopped at Walgreens so I could buy a neti pot. I havne't been able to breathe through my nose for awhile and it's driving me nuts. I've never used a neti pot before, so I'll report back.

It was a crazy Saturday night! Neti pot and I was out before 10:30 p.m. #wild

Sunday, Aug. 9


When I woke up, my legs weren't nearly as sore as I expected. But my shoulders and back were a bit sore. Breakfast was veggie omelets and leftover apple cinnamon pumpkin muffins.

I had two health coaching client sessions in the morning. I ate leftover tofu stir fry from earlier in the week for lunch. Then I meal planned and made a grocery list before the BF and I went to HyVee for groceries.

The afternoon was spent blogging, doing laundry, doing health coaching paperwork and watching Inside Amy Schumer (such a great show!).


I needed a break from couch/computer time, so I went on a 20 minute walk and listened to Thrive by Arianna Huffington.


When I got home, I made beet juice, roasted beets and made a delicious summer Freekeh salad (which I'll share with you later). The beets from our garden are on the left and the beets on the right are from the farmer's market. Nature is so pretty!


The BF made BLTs with tomatoes from our garden for dinner. So summery! We also had roasted carrots for some added veg.

While the BF mowed the lawn, I started watching Tig on Netflix. So so good!

It was a great weekend. I was so grateful for the time I spent with Brynn, I was so proud of Russanne and I for getting through the bike ride and I feel prepared for a healthy, joyful week.
