Weekend Recap {Aug. 21-23, 2015}

How was your weekend?

The BF and I didn't have any plans! It was much needed after a summer of busy weekends.

I made it a priority to do things that I wanted to do, and to avoid my to do list. I definitely need more self-care on the weekends and I need to focus more on being present. I tend to constantly look toward the future and stress about the things I need to get done.

I go into a new week feeling more recharged and rejuvinated when my weekends are filled with relaxation and fun.

Friday, Aug. 21

I had to work late at the Blue and Gold Showcase on campus. Classes started today, and Friday's event was the kick-off for the new school year. I had to be at my department's booth and hand out t-shirts to students.

I got home around 7:30 a.m., and the BF and I went to Hunan's for Chinese food. We've both been craving Chinese ever since we watched The Search for General Tso on Netflix. I had Mu Shu Chicken. It was a bit salty, but otherwise good. I don't love restaurant Chinese food because it's always so salty. I'm going to start experimenting with making my own at home.

Saturday, Aug. 22

Our kitchen was completely empty...no eggs, almond milk, oats, nothing. I found an oatmeal pack that I had made for our camping trip to Yellowstone, so I had that for breakfast. It was oats, hemp seeds, chia seeds, dried cranberries, goji berries, pecans and honey.

Then I went to hot power yoga class at the CHI Wellness Center. It was a great class! I haven't been going to yoga classes much lately, and this reminded me that I need to get back. It was challenging, and I felt strong and relaxed after.

When I got home, I enjoyed some coffee with coconut oil.

Then I went to the farmer's market - I bought a black diamond watermelon, a cantaloupe, a zucchini, a yellow squash, sweet corn, spaghetti squash and acorn squash.

Then I went out to my garden to pick kale, but started weeding. I ended up spending over an hour pulling weeds.

We have so much basil. I'll be making pesto soon!

And our tomatoes are starting to pop up like crazy.

For lunch, I had a salad topped with tomatoes, hemp seeds, feta and fig vinaigrette, and an egg sandwich on an English muffin.

My mom picked me up for a Target run to buy a gift. She bought me a green smoothie at Starbucks. Their smoothies are made with Evolution Fresh pressed juice and plain Greek yogurt. We ended up going to the mall as well, but I didn't buy anything (not even at Target!).

The BF went to Buffalo Records so I drank white wine and meal planned. I pulled out some of my old cookbooks that I haven't used in awhile for some recipe inspiration. I started thinking about myself in my 20's versus my 30's. In my 30's, I spend Saturday evenings drinking wine and planning healthy meals. That wasn't happening in my 20's!

For dinner, the BF and I had turkey burgers, grilled zucchini and yellow squash and sweet corn. The corn on the cob was so so good.

The BF and I went to the World Theatre to see Me and Earl and the Dying Girl. It was such a touching and sad movie. Definitely worth seeing!

Sunday, Aug. 23

Breakfast was toast topped with peanut butter, banana slices, hemp seeds, chia seeds, bee pollen and honey. I also had an apple cider vinegar drink and iced coffee.

The morning was spent lounging on the couch watching the Mindy Project. I started watching the show a couple of weeks ago from the beginning on Hulu. I had never seen it before, and I'm obsessed with it now. I'm in the middle of the third season already!

I also had a great phone date with my cousin, Kristi, who lives in Atlanta (I was in her wedding last summer). It's so fun catching up with her! I'm really bad at making time for phone calls with my out of state friends and family. One of my goals is to be better at keeping in touch with those that I care about.

The BF and went to Target and HyVee to get household items and groceries. We ended up going to the HyVee Market Grille for their Sunday brunch buffet. I had breakfast potatoes, a veggie omelet, crab cakes, cantaloupe, mac and cheese and a mini peanut butter chocolate cupcake. Not a healthy lunch, but quite delicious.

I spent the afternoon doing laundry and meal prepping. I cut up watermelon and cantaloupe, massaged kale, made kale chips and green juice, and roasted carrots, beets and sweet potatoes. I listened to the book Thrive by Arianna Huffington on Audible while I worked in the kitchen. This book is amazing!

The BF went to Cottonmill Park to play disc golf so I got back to the Mindy Project, blogged and had a glass (or two) of white wine.

Dinner was cod with lemon and dill, roasted carrots with butter and dill, and rosemary sage Freekeh. It was incredibly delicious, and I was proud of myself for throwing this one together. No recipes!

We ended the night by watching Rosewater on Netflix. It's a film written and directed by Jon Stewart about the arrest of a journalist in Iran. It was so so good. You must watch this!
