Weekend Recap {Aug. 28-30, 2015}

I hope your weekend was a good mix of fun, relaxing and productive!

I had a very low key weekend, which is always nice. I treated myself to some sushi, a yoga class, iced coffee and kombucha. I also spent lots of time taking Social Academy classes. I'm finally learning the ins and outs of social media!

Here's a little peek into my weekend...

Friday, Aug. 28

After work, I got right to work writing some blog posts for this week. I got to try freekeh, and I'm sharing my thoughts with you!


The BF and I didn't feel like cooking, so we went to the HyVee Market Grille for dinner. I had an avocado roll and a tuna roll. It's crazy, but HyVee is the best place to get sushi in Kearney. That's what it's like living in the middle of Nebraska!


After dinner, we picked up a few groceries. I spotted the Angie's Boom Chicka Pop Holidrizzle seasonal popcorn flavors!!! I bought two bags of Pumpkin Spice because I haven't had this one. They also had Candy Corn, which I tried last year. It is addictive!

Saturday, Aug. 29


Breakfast was scrambled eggs and sauteed kale, onions and red peppers, and green juice with a splash of apple cider vinegar.

I went to hot power yoga at the CHI Health Wellness Center. It was an incredible class. I was dripping in sweat, and my shoulders and butt were sore the next day!


I grabbed an iced coffee at Chapman Swifts before meeting with a client for a health coaching session.


When I got home, I made a super rich chocolate smoothie. This recipe will be one of five decadent smoothie recipes you'll get when you sign up for my newsletter! Stay tuned!


I then listened to a webinar as part of Social Academy. I'm learning soooo much through this program! Social Academy is put on by BexLife and Danny J. It's all about how to use social media to grow your business. Since I started blogging, I've just been figuring things out as I go by reading other blogs. Now I'm learning the specific tools and resources to use and it's a game-changer for me!


The BF peeled me away from my computer to make a trip to Cabela's for last minute camping supplies for his upcoming solo camping adventure. Then we went hiking at Cottonmill Park. It was crazy hot! But we had fun catching up and being outdoors.

I enjoyed a little treat after our hike - KeVita Master Brew Kombucha in Lavender Melon. So good! (from HyVee)


My niece, Brynn, came over for a few hours in the evening. She had a bit of a cold, so we drank tea while we hung out. The BF and I bought this tea at Teavana in Kansas City. It's so good!


For dinner, Brynn helped me make quinoa and the BF grilled chicken thighs and veggies. Brynn loved the chicken and quinoa, but wasn't so into the veggies. So I made her a little salad with mixed greens and Italian dressing. She loved it.

Sunday, Aug. 30


I slept in, then made amaranth chia porridge topped with raspberries and almond butter for breakfast. I'm changing things up! I usually eat oats, but it's nice to spice it up every so often.


The BF woke up feeling a bit rough. He may have picked up Brynn's cold. I got out my natural remedies to help him get better.

I had an early morning health coaching session with a client at Chapman Swifts. I had my usual iced coffee.

When I got home, I got right back to Social Academy. Learning, learning, learning!


I took a break from my computer to go bowling with my parents and Brynn. I am the queen of gutter balls!


Then Brynn played games in the arcade and won lots of tickets.


When I got home, I finished up my Social Academy class, I meal planned and headed to HyVee to get groceries for the week. The BF will be gone, and we bought a lot last weekend so I really only needed produce and a few staples.


For dinner, I made Moroccan Lentil Soup with Sweet Potato from Relish by Daphne Oz {<--- Amazon affiliate link} It doesn't look that pretty, but it was delicious. If you haven't checked out Relish, you must. It's a beautiful book with lots of great healthy living tips and delicious recipes. A fave of the BF's is her roasted cauliflower grilled cheese sandwiches. I love her avocado toast with harissa. I've liked everything I have made from the book.

And the weekend was over. I have a busy week, but I'm ready to be back in my routine.
