Weekend Recap {Sept. 5-7, 2015} - Labor Day Weekend

How was your Labor Day weekend? I hope you had time to relax and enjoy the last holiday weekend of summer.

The BF and I went on a quick trip with my family. It was nice to get out of town for a couple of days. Our Labor Day was VERY low key. We spent most of the day relaxing!

The weekend was also filled with lots of delicious food! It was a mix of healthy eats and indulgences.

Here are details from the weekend...

Friday, Sept. 4

After work, the BF and I made spaghetti squash with turkey tomato sauce for dinner. This was delicious! I'm actually testing recipes for a 28-Day detox I'm creating as part of my health coaching offerings. I'm currently testing out the detox!

Then we went to Straight Outta Compton. It was sooooo good!

Saturday, Sept. 5

For breakfast, I had a baked sweet potato topped with pure maple syrup, paleo granola and almond butter.

The BF and I had a slow moving morning, but we eventually hit the road to head to Lincoln. #photobomb

We really had no plans in Lincoln. My parents invited us to tag along since they were going to the first Husker game of the season.

Our first stop in Lincoln was the Pho Factory for lunch.

I had never had pho before! I ordered the tofu pho and it was incredible. It was probably the best tofu I've ever had!

The restaurant was next to an Asian market, so we stopped in to check it out. There was so much produce I had never seen before. It was fun to explore!

We bought rice noodles, sesame candy and a laughing Buddha (for $1!).

After a stop at the Moose's Tooth outdoor store, we picked up my mom and my niece, Brynn, from the Husker game. It was nearly 100 degrees, and they were over the game. (My dad stayed for the rest of the game). We went to Whole Foods before checking into our hotel. Most of the items we got were just regular purchases, except the beet juice and hi-ball energy coffee drinks (for the BF). We also picked up a new to us Oktoberfest and bottle of red wine. We also bought some white cheddar cheese.

I got myself a little kombucha treat. It was delicious!

While my mom and Brynn swam in the hotel pool, the BF and I explored the area around our hotel. We stopped by the Subaru dealer to look at my dream car.

Then we stopped at Kohl's. The Gaiam yoga collection at Kohl's is so good! I bought the Shine yoga bra and the Studio to Street Flow Yoga Tee in Heather Gray Hasma.

Brynn let me put her hair in adorable little braids before dinner.

For dinner, we all went to La Margaritas. I had fish tacos and a margarita. It was all delicious. I veered from my detox test a bit during our trip ; )

The BF and I went downtown to see a show at the Zoo Bar. We left around 11:30 and walked around downtown. Above is the Nebraska State Capitol.

Then we went back to the hotel.

Sunday, Sept. 6

The hotel breakfast was scrambled eggs, breakfast potatoes, sausage and fruit. I also enjoyed a buttermilk pancake.

While my dad and Brynn hit the hotel pool one last time, the BF and I went to Starbucks (I had cold brew coffee), then went to Barnes and Noble. I bought Brynn the book Wonder {<-- Amazon affiliate link} (but later found out she's reading it in school). It looks like a great book, so I may read it myself even though it's meant for 3rd- to 6th-graders. We also stopped by Scheel's where I bought an amazing Lucy cowl neck sweatshirt (above) {<-- Amazon affiliate link - it's the same price on Amazon as it was on sale at Scheel's}. I can't wait to wear it this fall and winter!

We met my parents at Trader Joe's where we all stocked up on our favorite items. When we go to Lincoln or Omaha we always stop at TJ's and Whole Foods to pick up our fave products. New to us items were the Cookie Butter, the Green Dragon sauce and the Ancient Grains Super Seed Oatmeal. Not pictured is Dr. Praeger's veggie burgers and TJ's Vegetable Masala Burgers (also new to us).

Then we went to lunch at Tom + Chee. Me: "Hey guys, let me take your picture."

I had the mushroom and swiss sandwich on gluten-free bread and chunky tomato basil soup. This might be my fave Tom + Chee sandwich.

All five of us split the Blueberry Blue Grilled Cheese Donut. It. Was. Incredible. It was filled with blueberry compote, lemon mascarpone and blue cheese. Yum!

The BF and I headed home. My fam stayed to go to the children's museum. When we got home, we were exhausted. We spent the rest of the day watching Sons of Anarchy. We just started the first season, and we're hooked!

Monday, Sept. 7 {Happy Labor Day!}

After sleeping in, I made my favorite cold breakfast oats with my new Trader Joe's Ancient Grains Super Seed Oatmeal. I topped it with blueberries and almond butter.

The BF and I spent the entire morning drinking coffee and binge watching Sons of Anarchy.

I spent the afternoon working - blogging, scheduling social media posts, emailing health coaching clients, checking emails, planning for the week, etc. For lunch I had scrambled eggs, sauteed kale and a Dr. Praeger's veggie burger.

For dinner, the BF made Thai Basil Cashew Chicken. He loosely followed this recipe from Running to the Kitchen. But he never follows recipes exactly. It was absolutely amazing. This is going on our regular dinner rotation. This is exactly why trying new recipes is important!

While the BF cooked, I did our meal planning for the week.
