Weekend Recap {Sept. 11-13, 2015}

Hello! How was your weekend?

The BF and I had a great weekend mixed with fun, adventures, relaxation and some productivity. We didn't have any plans (besides by work to do list), so we just did what we felt like. Sometimes those are the best weekends!

Friday, Sept. 11

After work, I did some health coaching bookeeping. Then the BF made breakfast for dinner while I watched the Real Housewives of New York City.

It was a low key night.

Saturday, Sept. 12

I made my usual cold oats for breakfast - gluten-free oats, blueberries, chia seeds, almond milk, stevia, cinnamon and almond butter. I made them more of a weekend treat by topping them with coconut butter, flax seeds and bee pollen. I also had an apple cider vinegar drink and my usual Life Equals vitamins.

I went to hot power yoga at the CHI Wellness Center. I struggled quite a bit with my tight hamstrings, and my upper body felt weak. But it was a good class. I enjoyed a cup of coffee when I got home. I wore my new Lucy Activewear sweatshirt that I bought in Lincoln last weekend. Love it!

The BF and I went to the farmer's market. All the farmers had pumpkins and squash! It felt like fall.

We bought corn on the cob, spaghetti squash, acorn squash, peppers and jalapenos.

For lunch, I made my fave salad of the moment - mixed greens, spinach, turkey bacon, hard boiled egg, tomatoes, hemp seeds and homemade tahini Dijon dressing.

The BF and I got sucked into more Sons of Anarchy. We were in the middle of the third season and totally hooked in. We finally realized we were missing out on a beautiful day, so we made quick snacks. I had a peanut butter mocha smoothie.

Then we drove out the Fort Kearny. The BF played a round of disc golf while I took random photos.

Then we found a trail to hike.

For dinner, we made white bean chicken chili. It was really really delicious. This is going to be a go-to this winter!

We spent the rest of the evening bingeing on SOA. For dessert, I combined a spoonful of almond butter with cocoa powder and honey and poured it over banana slices. Yum!

Sunday, Sept. 13

I woke up feeling inspired to cook a delicious breakfast. One of my favorite things is making a special breakfast on the weekends. I haven't done it in weeks because I've been seeing clients early in the morning on weekends or the BF and I have been out of town. So I made Strawberry Rhubarb Baked Oatmeal from SkinnyTaste, which was delicious.

I also made frittatas in ramekins so that I could make mine dairy free and add cheese to the others.

While everything was in the oven, I made Coconut Crack Bars from Chocolate Covered Katie, Vegan Peanut Butter Mousse from the Minimalist Baker and Salted Raw Caramel Dip by Detoxinista. I have a major sweet tooth, so I like to have healthier desserts ready to go so I don't reach for something unhealthy.

I spent the rest of the morning working on my upcoming Kick Your Sugar Cravings Workshop, creating a 3-Month Health Coaching Program, scheduling Facebook posts and working on health coaching marketing. I took a break to watch Gravity with the BF. It was stressful, but a good movie.

For lunch, I had leftover tofu veggie stir fry and rice. I also ate an apple with raw caramel dip. So so good!

The BF went on a bike adventure! We explored a new part of the city's hike and bike trail. It's on the east side of town, and goes out past The Archway.

We stopped there for some water.

Then we were on our way.

I rehydated at home with some sparkling water. I blogged, wrote this week's newsletter (it's a recipe perfect for fall! get it here) and I watched the last Real Housewives of NYC show of the season.

We hadn't planned anything for dinner, so we went to HyVee for the salad bar. We ran into my parents there, so they sat with us while we ate. Then we ran into my brother, sister-in-law and niece. Small town living!

I wasn't quite ready for the weekend to end. But here we go! Another work week!
