Weekend Recap {Sept. 25-27, 2015}

I'm going to be honest, I wasn't excited to share my weekend with you this week. When I started thinking about how my weekend went, I could only see the negatives...I didn't get a lot of sleep, I had a headache all weekend, I didn't get much of my to do list done, I didn't do laundry, I didn't clean my house and I indulged more than usual because I didn't feel well and I was tired.

But I realized that I often beat myself up for what I don't get done. So I'm taking a moment to think about the positives from the weekend.

  • I spent tons of time with my parents and my niece, Brynn (dinner out, homecoming parade, supermoon viewing in the backyard)
  • I made delicious breakfasts Saturday AND Sunday mornings.
  • I picked so much kale from my garden.
  • I got to see that amazing moon.
  • The BF spent tons of time together.
  • I decorated for Halloween.
  • The BF and I didn't get sucked into Sons of Anarchy until Sunday.

I also realized that I want to share my super healthy weekends and my not-so-healthy weekends with you. Because this is life. Sometimes it's hard, and I struggle.

So here are details from my weekend...

Friday, Sept. 25


I got off work feeling super motivated to work on my 28-Day Transformation program. I'm almost finished with the first draft, which I'll be handing over to a few brave testers this week.


After working for awhile, the BF and I lounged until my mom and my niece, Brynn, stopped by. We all decided to go to dinner together at Buffalo Wild Wings, which recently opened here. That photo of my mom and Brynn perfectly captures Brynn's personality.


I ordered the black bean burger with blue cheese and buffalo sauce. I've had it at a BWW before, and it was good. But this one was not good. I only ate a few bites, and nibbled off everyone's plates. My fries were terrible also. Luckily, I had a Sam Adams Oktoberfest, which was delicious.


Brynn asked if she could stay with the BF and I, so we had an impromptu sleepover. It involved a fashion show, playing hair salon (I think I lost half my hair!), going through all of my earrings and watching Brain Games.

Saturday, Sept. 26

I woke up feeling pretty rough. I slept in the guest room with Brynn, and she is a crazy sleeper - legs flopped over me, sleeping nose to nose, talking in her sleep, sitting up and looking around in her sleep. Super crazy.


I made paleo pumpkin muffins and vegetable omelets for breakfast.


We also had some watermelon and coffee, of course. This is the time of year when we're still eating watermelon and tomatoes, but baking with pumpkin and drinking pumpkin spice lattes! Summer is lingering into fall.


We met my parents at the homecoming parade. I found my boss, and the BF, Brynn and I helped pass out University of Nebraska at Kearney pins until the parade started.


After the parade, I grabbed an iced coffee from Chapman Swifts and stopped in this new place downtown called The Rustic Patch. You can having drinking and crafting parties there! This may happen in my near future.


The BF and I went to Fanatics to meet a friend for lunch and Husker game watching. I ordered a chicken, spinach and mushroom pizza, and it was just OK. I get annoyed when I indulge in something and it's not amazing. I don't want to waste an indulgence on something that's just OK.

I made it through the third quarter and convinced the guys to leave. I was super tired, had a headache and football is boring. I spent the rest of the afternoon laying on the couch, trying to get up and be productive, then going back to the couch. I wasn't feeling hot. I ate some Boom Chicka Pop Pumpkin Spice Kettle Corn and a handful of Pumpkin Spice Candy Corn (sugar overload!).


The BF and I had BLT's and corn on the cob for dinner (more summer food in fall!).


Then we got ready for a night out. This was actually me trying on my latest Stitch Fix. I ended up wearing jeans and a t-shirt, but my make-up was on point. (I'll post my latest Stitch Fix after I take photos during the day with more light.) We saw the Hoot n Hollers at J Rods Rock Shop. A local tattoo artist hosts bands in his garage out in the country. It definitely wasn't my usual scene, but it was fun to get out of my comfort zone a bit. And the band was so so good.

We got home at 2 a.m.

Sunday, Sept. 27

When I got out of bed at 9:30 a.m., I felt hungover even though I didn't have sip of alcohol the night before. This is what being in your 30's is like - you get hungover just from staying up late. Ugh.


I made a vegetable and white cheddar frittata for breakfast. I also had a leftover gluten-free, naturally sweetened chocolate doughnut with maple peanut butter frosting. Yum!

I made our meal plan for the week, then the BF and I spent the rest of the morning watching Sons of Anarchy. I was actually proud of us because we made it to Sunday before getting hooked again.


For lunch, we had leftover black bean and sweet potato enchiladas. I also made pumpkin pie chia pudding parfaits (I'll share the recipe this week!). I also put up our Halloween decorations…all five of them.


In the afternoon, we got a few groceries at HyVee, I did some meal prep - massaged kale, made zucchini and yellow squash noodles, chopped up broccoli, made watermelon juice and froze some kale for smoothies.


I drank wine because the weekend felt exhausting and I felt like I needed another day off.

The BF has been asking if we can go to Valentino's for, like, six months. I always say no because I hate buffets and I don't think Valentino's is good…at all. It's an Italian buffet that is below mediocre. But because I was exhausted from a weekend of headaches and no sleep, I agreed when he asked if we could go. I had a salad, a breadstick, a couple of pieces of pizza, a few bites of manicotti and pasta primavera and a sweet breadstick. That's why I hate buffets. No matter what, you always eat too much. I felt so gross after that meal.


When we got home, Brynn texted and asked if we would walk to my parent's house to watch the lunar eclipse. We all sat outside and talked and watched the moon. It was exactly what I needed after not feeling so hot all weekend. The Blood Moon was absolutely beautiful.


I had another sleepless night last night, so I'm definitely not ready for Monday! But I got up this morning and led a bootcamp before work. The workout gave me a little boost of energy and positivity. I'll feel better after feeding my body with healthier foods, getting in a few workouts and getting some sleep this week! I also pulled this "I believe in Me" affirmation card this morning! Perfect for a Monday after a rough weekend.
