Weekend Recap {Nov. 13-15, 2015}

How was your weekend?

I hope you had a relaxing and wonderful weekend. I did some Christmas shopping, relaxing and celebrating a recent success.

Here are details from my weekend...

Friday, Nov. 13


After work, I slipped on my favorite flannel pajamas and poured myself a glass of wine to celebrate my first workshop as a health coach. My Kick Your Sugar Cravings Workshop the night before was a success!

The BF and I decided to celebrate with a dinner out. We went to our favorite spot...the HyVee Market Grill. We shared some amazing spinach artichoke dip, and I had salmon with wild rice and asparagus. It was delicious!

It was a great night out. The BF and I needed to spend some time together!

Saturday, Nov. 14

I started the day by drinking some warm water with lemon essential oil while the BF and I watched the news to learn the latest on the Paris attacks. So sad and horrific.

Breakfast was a honey wheat bagel topped with almond butter, banana slices, honey and chia seeds.


I got ready for the day, and sipped my coffee before my mom and niece, Brynn, picked me up. I was feeling extra grateful to spend the day with my family.

We drove to Lincoln to do some Christmas shopping!

We stopped at a gas station about halfway there, and I picked up my favorite gas station snack - Smartfood popcorn. This is the new delight version. It's not as good as the regular version, but it has fewer calories.

We went to SouthPointe Pavilions to hit up Barnes and Noble, Charming Charlies and Bed, Bath and Beyond. I totally thought Brynn needed those ear muffs!

We took a break for lunch at Red Robin because it was near all the shops. I had a turkey burger that was horrible (not homemade). Luckily, my mom gave me half her grilled chicken caesar wrap, which I ate instead of my burger.

I popped into Trader Joe's to buy the BF Green Dragon Hot Sauce (and just so happened to grab a few other things), while my mom and Brynn went to a shoe store.

Our last stop was Kohl's. My mom bought me the Gaiam Compass Sherpa Open Front Wrap, which is beyond amazing. It's so cozy. I will live in this throughout the winter! I also got another Gaiam Studio to Street Flow Yoga Tee. These tees are so comfortable!

On the drive home, we ate Trader Joe's Candy Cane Joe Joe's, listened to Taylor Swift and made a whole bunch of Dubsmash videos. We laughed so much my cheeks hurt by the time we arrived home.

Besides being a fun trip, I actually bought a bunch of Christmas gifts!

I made black bean and sweet potato enchiladas for dinner. They don't photograph well, but they taste absolutely amazing.

The BF and I spent the evening watching Master of None, our new favorite show.

Sunday, Nov. 15


I made pumpkin pancakes from a mix I picked up at Trader Joe's. The BF said they were the best pancakes he's ever had. They were pretty amazing!

The rest of the morning was low key. Lots of relaxing on the couch. I meal planned for the week, and meal planned for an upcoming cabin stay at Platte River State Park. I spent way too long browsing Sephora.com. They were having their annual VIB sale, so I bought some products I am running low on. I shared my favorite Sephora products on the blog last week.


I also ordered my frames from Warby Parker. I ordered five frames, which I tested out for a week. I went with the Becketts. There were three that I really loved, so it was hard to make a decision! The above photo was taken earlier in the week, when I was trying the Becketts out with my hair in a top knot.

I finally got out of my pajamas in the middle of the afternoon, and the BF and I went to HyVee for groceries.

I did a little meal prep when we arrived home. I made turkey meatloaf muffins and paleo granola. The paleo granola was on the dark side. It wasn't getting crunchy, so I left it in the oven. I realized it hardened when you let it cool. It still tastes fine.

The BF made almond crusted chicken, roasted carrots and Brussels sprouts and risotto for dinner, and it was delicious.

Because the past few weekends have been full of workshop prep, I didn't do any work this weekend! It was nice to have a break and just have fun and relax.
