Weekend Recap {Nov. 20-22, 2015} - Platte River State Park

The BF and I spent the weekend in a cabin at Platte River State Park.

I decided to use the weekend away as an excuse to take a phone/computer/internet/social media/blogging detox. It was much needed, and felt so good to disconnect.

We spent the weekend with our friends - Mark, Beth, Meggan, Kevin and Russanne. It was so much fun to laugh, play silly games, indulge in delicious food, relax, hike and enjoy some cocktails with everyone.

All of us take turns making meals, so we get to try new dishes, which is fun. We had some delicious food. I didn't eat the healthiest on this trip, mostly because I didn't bring healthy snacks like I usually do. I ended up eating way too many chips and crackers and too much cheese. I'm feeling it today! (I drank lemon water this morning, and ate lots of fruits and veggies to get back on track!)

Friday, Nov. 20

I took the day off work to get ready for a weekend trip to Platte River State Park. I spent the day packing, making meals and cleaning the house.


The BF and I left for the cabin in the afternoon. We drove through crazy winds, rain and a bit of snow, but we made it. We arrived when it was dark, but that's our cabin in the daylight.


We spent the evening hanging out, having cocktails, laughing and relaxing. We had posole for dinner, and it was delicious. I had never had it before, so it was fun to try something new. Meggan and Kevin made this dinner, and served the soup with tortillas and corn bread.


We spent the rest of the night, hanging out and chatting. I made a cocktail with Tropicana Farmstand 100% fruit and vegetable juice and vodka. Yum!

Saturday, Nov. 21

The BF and I got a room with a bunk bed. Not comfortable, but totally hilarious.


Breakfast was pancakes, eggs and turkey bacon.


Then it was time for hiking. It was pretty chilly, but once we started moving it wasn't so bad.


We crossed lots of beautiful bridges.


Even though all the trees were bare and it was cold, it was still beautiful.


Platte River State Park has a few towers you can climb to get a view of the Platte River.


When we got back to the cabin, we snacked on brie, gouda and crackers, and enjoyed some mimosas. After playing a board game, we had lunch. Meggan and Kevin made deconstructed turkey cabbage rolls with rice. It was really good.


We relaxed for a bit before going out for our second hike of the day.



It was even colder, but it was another beautiful hike.


When we returned, I made mulled wine, which was a perfect way to warm up. We played games until dinner.


The BF and I made black bean and sweet potato enchiladas and Spanish rice. These enchiladas are so so delicious!


The rest of the night was spent playing Cards Against Humanity and eating s'mores. Reece's Peanut Butter Cups are a game-changer for s'mores. We also ate our s'mores with a chocolate bar with toffee pieces...so so good!

Sunday, Nov. 22


I woke up before 7 a.m., and before the rest of the group. I hung out in the living room reading magazines and watching the sun rise.

The BF and I made pumpkin pancakes (from a Trader Joe's mix) and a vegetable frittata for breakfast. I forgot to take a photo!


After getting ready, we were off an another hike. It was warmer on Sunday.


Then we headed out for our last hike. We hiked for nearly two hours!


When we got back, we demolished a plate of cheese and crackers, and ate cake straight from the container. We ate so much, we decided to skip lunch.

Then it was time to go. We packed, cleaned the cabin and headed home.


The BF and I made a quick stop in Lincoln to restock our pumpkin pancake mix. That stuff is so good! We, of course, bought a lot of other things as well. I'm excited to try the Honey Walnut Fig Cream Cheese!

We got home around 7 p.m., and picked up the dog at my parent's house.

We were both exhausted from a weekend of hiking, and went to bed early.

Next time we go cabining, I'm bringing healthy snacks. I was off my game! I just needed more fruits and veggies. Even health coaches get off track at times ; ) But it was a great weekend, and a much needed break! I loved every minute.
