Weekend Recap {Dec. 4-6, 2015}

Happy Monday!

I started my day with a strength training class and a delicious breakfast - an egg scramble with spinach, kale, mushrooms and smoked gouda, sprouted grain toast, warm water with lemon and orange juice with apple cider vinegar.

I needed a nourishing breakfast and some movement after feeling blah most of the day Sunday. I'm not sure what was going on, but I had low energy, I was moody and I had no appetite. 

But I'm ready to have a positive, productive and fun week!

Friday, Dec. 4

Usual Friday scene after work. Pajamas + wine.


Friday night was book club night! I met up with the ladies - Russanne, Beth and Meggan - at Beth's house in Hastings. The BF hung out with Beth's husband, Mark, during book club. Beth had wine and all the best cheeses ready for us! I didn't eat dinner before arriving, so I ate my weight in crackers and brie, smoked gouda, havarti, cheddar and gruyere. This ended up being my dinner. Yum!

We read The Girl on the Train, which was a bit depressing but super suspenseful. I recommend giving it a read. 


I wore my new glasses so I looked smarter for book club.

On our way home, I hit the biggest raccoon I have ever seen! I didn't see it on the highway until it was pretty close. I hit my brakes and swerved to the left lane, and the raccoon ran in the same direction that I swerved! It was traumatic, and caused a bit of damage to my car. But we made it home safely. 

Saturday, Dec. 5

I've been obsessed with scrambled eggs lately, so I made them for breakfast with feta along with sautéed spinach and sprouted grain toast. I got myself ready, enjoyed some coffee, then took off for Grand Island for a morning of Christmas shopping with my mom. We both had Kohl's cash and Kohl's was having its 25% off friends and family sale. I picked up a few gifts, and bought myself a Gaiam top for $3.40 and a Gaiam yoga bra for $9 (before the extra 25% off!). 

I also found decorative Buddhas for $3 at TJ Maxx. 


We had the lunch buffet at Royal Indian Cuisine before heading home. We ordered some to go for the BF. I knew he would be jealous that I ate Indian food without him. 


I spent the rest of the afternoon decorating the Christmas tree and wrapping Christmas gifts.


Then the BF and I went to see Creed at the movie theater. It was really good!

The movie got over around 9:45 p.m., and we hadn't eaten dinner. We stopped at Perkins so we could have breakfast for dinner. I had an egg scramble with spinach, tomatoes, onion and mushrooms and apple chicken sausage. I also had a waffle, which was delicious. 

Sunday, Dec. 5

I slept in, then made our meal plan for the week. The BF will be working evenings Wednesday through Friday, so I planned easy meals for myself on those nights. 


I ate the last of our Thanksgiving sweet potato casserole for breakfast. I added a scoop of almond butter to give it some protein. I also had green juice with ACV, coffee and my supplements.


We picked up groceries at HyVee, then got peppermint mochas from Chapman Swifts while we checked out their Holiday Flea, which featured art and crafts made my local people. We didn't buy anything, but there was some cool things there. (my peppermint mocha was made with almond milk and one pump of peppermint)

The BF and I had planned on going to Hastings for a gingerbread house making party at Russanne's, but the Timbers were playing in the MLS Cup Sunday afternoon and the BF wanted to stay home and watch the game. The gingerbread house event is one of my favorite holiday traditions, but I decided to stay home with the BF because this was his last weekend off for a few months. 


I made some holiday treats (which I'll share with you soon), wrapped a few more gifts and relaxed on the couch while he watched the game. 


By the late afternoon/early evening, I wasn't feeling the best. I was tired, had no appetite, felt a bit nauseous and was sort of cranky. I didn't eat anything until about 9 p.m. when I had an English muffin. 

Today is a new day, and I'm feeling much better! I didn't workout at all over the weekend, and my eating was a bit off, so I'm looking forward to getting back on track this week. I've already planned out my workouts for the week!
