Weekend Recap {Dec. 11-13, 2015}

I felt like I could have slept for a few extra hours this morning! 

I had a full weekend with my family and I'm a little exhausted today. I joined my parents and my niece, Brynn, for a weekend road trip to Omaha and Lincoln for some fun kid-friendly excursions.

I'm feeling a bit under the weather today, and I'm feeling pretty tired. I definitely wasn't ready for Monday! Why do weekends fly by so quickly.

Friday, Dec. 11


After work, I made a quick trip to the store to buy a couple of Christmas gifts. Earlier in the week, my mom, Brynn and I had picked some people in need to buy gifts for. There is a S.A.F.E. Center Giving Tree at Midway Chevrolet, and we stopped by and picked two people to shop for. When we had shopped earlier in the week, we couldn't find a few of the items. So I finished up their wish lists Friday. At K-Mart, you could get slippers for $1 when you bought a pair of boots. So I gifted myself with a pair of slippers. 

The BF was working late, so I relaxed in my new slippers, drank wine and watched Christmas movies. 

There was a random knock at my door around 6:30 p.m., and it was my parents and Brynn. They invited me to go to Hobby Lobby with them. It worked perfectly because I needed an item for a Christmas craft. We checked out some Christmas lights before they dropped me off at home.


For dinner, I made a grilled cheese sandwich with smoked gouda and apple slices on sprouted grain bread. The best comfort food!

Saturday, Dec. 12


Breakfast was scrambled eggs, sauteed kale, mushrooms and onions and sprouted grain toast. I also had green juice with apple cider vinegar.


I taught three fitness classes - Chizzel, Core and More, and Aqua Blast. Two hours at the gym and I was exhausted!


I quickly got ready before my parents and Brynn picked me up. We drove to Omaha for my cousin's son's third birthday party. I ate SmartFood Delight White Cheddar Popcorn in the car (Brynn picked it out because she knows it's my fave road trip snack), and I had a Starbucks peppermint mocha (coconut milk, one pump of syrup). 


Before heading to the party, we stopped at the Nebraska Crossing Outlets. It was freezing, but we still enjoyed the decorations. I wish we would have had more time to shop! My mom bought me an amazing vest from Columbia (I've been looking for a good puffy vest!) and I picked up a sweater and some pants for work at The Limited (I needed bigger pants, ugh!). 


The birthday party was at The Amazing Pizza Machine, which is a child's dream come true. They have a huge buffet with pizza, pasta, tacos, desserts, baked potatoes and slushies, and a huge arcade with games and rides. 


I had a salad and spinach and artichoke pizza. I ended up not eating that piece of mac and cheese pizza because it was not good. The food wasn't amazing.


Brynn and I rode a roller coaster and the Frog Hopper, and we drove go-karts. We had a lot of fun together. We also had a great time catching up with our cousins and their kids and my aunt and uncle.

After a few hours of fun, we drove to Lincoln and checked into Embassy Suites. We all hit up the pool (my mom and I hit up the hot tub), before going to bed.

Sunday, Dec. 12


I woke up before everyone else and couldn't go back to sleep, so I went to the hotel gym. I ran/incline walked on the treadmill for 30 minutes. The Embassy Suites doesn't have a great fitness center. It's just two treadmills, two elliptical machines and a stationary bike. But it was enough to get moving before starting the day.


I took a quick shower and got ready before meeting up with Meg Higgins of The Megnificent Miles. She reached out to me awhile ago with the sweetest comments about my blog. She began her weight loss journey last April, and she's lost 50 pounds!! Her blog is real and inspiring. She had mentioned wanting to meet for coffee at some point since we both live in Nebraska, so I reached out to her to let her know I would be in Lincoln. 

We had coffee at The Coffee House downtown and talked weight loss, plateaus, blogging and lots more. We realized that we graduated from the University of Nebraska-Lincoln College of Journalism within two years of one another! Small world.

She also brought me Elli Quark yogurt to try! It's a German-style yogurt that is sweetened with stevia and fruit so it has a lot less sugar than typical flavored yogurt. I'm excited to try it! Just so you know, you can totally buy my friendship with food ; )

It was so great meeting Meg. I hope we can get together again!


Back at the hotel, my mom and I had breakfast. I had an omelet with spinach, mushrooms, tomatoes, onions and cheese, and a waffle. Embassy Suites has delicious made-to-order breakfast options!


We also had a (rainy) view of Memorial Stadium from our hotel room. It rained like crazy all night Saturday and all day Sunday in Lincoln.


The fam and I then went to the Lincoln Children's Museum. My mom made an appointment for us to decorate a gingerbread house. 


It was a lot of fun. Although Brynn was bummed because they said we weren't allowed to eat the candy. Eating the candy is the best part of making a gingerbread house!!


There was a winter storm warning, so Brynn spent about 30 minutes in the museum before we hit the road. We got home around 4:30 p.m., and I spent the rest of the day relaxing with the BF. 

I'm wishing I could go back and relive my carefree and fun weekend. I made my to do list for the week, and I kind of feel like going back to bed. I have too much to do. 

But I'm going to stay committed to the 12 Days of Self-Care, and I'm also going to try to incorporate some fun into my weekdays. I tend to be all work no play during the week.
