Weekend Recap {Jan. 1-3, 2016} - Last Weekend of my Holiday Break

Well, I'm back at work today after having almost two weeks off. And to be totally honest, I'm not thrilled.

My break from work was much needed. I spent my time off sleeping in, enjoying slow moving mornings, living in my pajamas, watching a lot of Netflix, drinking wine and indulging in more sweets than usual.

But I suppose it's time to get back to the real world. 

First, here's how I spent the last weekend of my holiday break...

Friday, Jan. 1

Happy New Year! This is me first thing on the first day of 2016.


I began the first day of 2016 with French toast. I used the homemade whole wheat nutty bread that the BF made in our new bread maker.

I spent the morning thinking about my goals for the year. I shared them here. I also took some time to think about things that are no longer serving me, and how I can move on from them.


For lunch, I made a grilled cheese sandwich with Fuji apple slices, cheddar and camembert. 

The rest of the day was spent cuddled up on the couch watching Friends on Netflix. All. Day. Long.


I did take a short break for some yoga. But then I got back to relaxing. 

Saturday, Jan. 2

I wasn't super hungry when I woke up, so I toasted a slice of homemade honey whole wheat bread and topped it with Greek whipped cream cheese and my aunt's homemade blueberry jam. 

I went to Power Yoga at the CHI Wellness Center. 


Then I went shopping! I was on a mission to buy new workout tops (in larger sizes). My workout clothes are currently a little snug, and I don't feel comfortable wearing them. (more on my weight gain here) As much as I didn't want to buy more workout clothes in bigger sizes, I know it will keep me going to the gym. I ended up getting cute stuff from Target and Old Navy. I also treated myself to a Suja.


I also went through all of my clothes and got rid of or stored away workout clothes I don't love or that don't fit well. 

Lunch was a salad with mixed greens, roasted sweet potato, sunflower seeds, hemp seeds, gorgonzola and a homemade lemon vinaigrette. 


I spent the afternoon making some edits and designing my 28-Day Transformation program. It will be done this week! 


My niece, Brynn, came over in the afternoon, and she played "Yoga Shoppe." She sold yoga mats for $2 and classes for $1. Best yoga studio ever!

All week, the BF and I had been looking forward to eating at Flippin Sweet for dinner on Saturday night. We were going to have a New Year celebration since he had to work on New Years Eve. But when we got there at 7:30 p.m., they were out of pizza dough!! What?!?! 


So we went to the HyVee Market Grille instead. My parents and Brynn joined us. I had salmon with wild rice and grilled vegetables. We all shared spinach artichoke dip and pepperoni pinwheels as appetizers. 

Brynn ended up staying the night, and before bed we had a spa night. We made a homemade face mask that was kind of a disaster. I combined oats, mashed banana, honey and coconut oil. It just dripped off of our faces in globs. Maybe I needed to blend it up first. We also drank cucumber water and gave each other foot rubs. 

Sunday, Jan. 3

Our dog woke me up before 7 a.m., so I lounged on the couch scrolling Instagram until I remembered that registration for the Lincoln Half-Marathon opened at 3 a.m. I assumed it would be full because it always fills up super fast. But I was able to register!

I will run my 10th half-marathon on my 33rd birthday! I'll share more on this later.


Brynn slept until 9:30 a.m., so I made naturally sweetened chocolate doughnuts with chocolate frosting and cream cheese frosting while she slept. 


We also ate scrambled eggs and turkey bacon for breakfast. I added goat cheese to my scrambled eggs. Game changer!


She wanted to play Yoga Shoppe again, and we ended up doing a 30 minute practice together. 


About 10 minutes in, I changed the yoga video because it was too challenging and the dog immediately took his spot on my yoga mat. 


Even after I moved him, he stayed at the bottom of my mat snoring. 

Brynn helped me take down my Christmas decorations. Sad.


Then we had lunch at my parent's house. My mom made us chicken fajitas. We also had Ellie Quark strawberry yogurt topped with blueberries.


I went home and cleaned and meal planned for the week. The BF arrived home from work, and we went grocery shopping at HyVee.

I also meal prepped! I made juice. I have a post on juicing come up soon!


Quinoa, hard boiled eggs, roasted sweet potatoes and a seed mix with hemp seeds, sunflower seeds and pepitas for salads.

The BF and I ate pizza for dinner, and I enjoyed my last few hours of freedom.
