Weekend Recap {Jan. 15-17, 2016}

Happy Monday!

I'm out of town today at my first corporate health coaching gig! I'll be speaking at a conference for educators on a few different health topics. I'm so excited and nervous! I spent a lot of the weekend creating the content for a few of my sessions. 

But I made sure to make time for fun, relaxation and prepping for a healthy week.

Friday, Jan. 15

Since I worked for 14 hours on Wednesday, I took Friday afternoon off to work on writing content for my conference sessions. I spent the entire afternoon working.


Then I drove to Hastings for yoga, dinner with the girls and book club. I knew I would need some fun and unwinding in the midst of a working weekend. When I arrived in Hastings, my mom let me know that my aunt and uncle from Kansas were in town. I decided to do yoga and dinner, skip book club and head back home to spend time with them.

Yoga at Avani Yoga Studio was amazing. We worked on crow pose, so it was very challenging.  

Saturday, Jan. 16

I woke up early and decided to start the morning slowly before getting to work. I watched Friends, oil pulled, drank an apple cider vinegar drink and checked Instagram before making coffee and toast with natural peanut butter, banana slices and honey.


Then my niece texted and asked if the BF and I wanted to come over to my parent's house for breakfast. I carried my toast down the street to have breakfast with the fam.


At home, I worked.


Then the BF and I went to Office Max to get printer ink. We stopped at Target so I could buy a new water bottle (I left mine at the yoga studio), and I spent $70 and bought a whole bunch of food because I was hungry.


We grabbed lunch at Panera. I tried the new roasted turkey and caramelized onion and kale panini with black bean soup. 


The BF got his hair cut, so I drank half a Kevita Sparkling Probiotic Drink while I waited.

We relaxed for the rest of the afternoon. Then grabbed dinner at the new Flippin Sweet Burger Joint. I had the Holly Golightly - arugula, truffle aioli, caramelized onions and mushrooms on a veggie burger. It was so so delicious. 

Sunday, Jan. 17

I slept in until 8 a.m., and got to work as soon as I was up. 


I took a break around 9:30 a.m. to eat breakfast. I made scrambled eggs with goat cheese and homemade bread toasted with butter.


I meal planned. The BF and I had planned to do our juice cleanse last week, but I ended up going to Omaha that day to see the president speak. So we pushed it back to this week. I'm excited! I've never done a juice cleanse. I drank the rest of my Kevita and ate Elli Quark while I meal planned.


The BF and I spent the afternoon ice skating with my family! It was so much fun. Ice skating is hard!


When we got home, I did a little meal prep - I made quinoa, overnight oats and zucchini noodles with my new KitchenAid spiralizer. 

We grabbed Chinese for dinner before picking up groceries.

The BF and I ended the night by watching Finding Vivian Maier on Hulu.
