Weekend Recap {January 22-24, 2016}

Happy Monday!

The weekend flew by! My weekend was a mix of work, running, family time and cleaning the house. I could have used more rest and relaxation, so I'll have to make sure I get some rest this week.

Friday, Jan. 22

I was really looking forward to a night in to relax after a busy week. I had a bit of a chocolate craving, so I made Double Chocolate Banana Bread. The recipe I used was sweetened with bananas and dark chocolate chips, and it was so so good! I highly recommend this recipe!


I relaxed with some episodes of Friends, wine and chips and Wholly Guacamole. 

The BF and I had chicken and black bean enchiladas for dinner. Then we had an exhilarating evening watching Dateline. We're so cool.

Saturday, Jan. 23

I woke up early to get ready for a day of work. I did my usual morning routine, and I made avocado toast with eggs and goat cheese for breakfast. 


I spent most of the day at my health coaching booth at A Shift in the Heartland: Expanding Consciousness & Creating New Perspecties, a conference that featured sessions on reflexology, energy field, Ayurveda and more. It was organized by Teresa Bushnell, a holistic health and healing energy practitioner

I didn't attend the sessions, although I thought they sounded really interesting. The conference fee wasn't in my budget, and I wanted to use the time to get some work done. I blogged, did some health coaching bookkeeping and wrote some sample blog posts for a freelance gig I'm applying for. 


The BF brought me my favorite salad for lunch - the kale pesto caesar salad with crab cakes from Sozo American Cuisine. So so good!


When I got home, I ate some chocolate banana bread. 


That evening, the BF and I drove to Hastings for SIP: Spirits and Interesting People at the Hastings Museum. It was so much fun! It's kind of the same concept as speed dating, but you go table to table and learn about different topics from experts. You stay at each table for 9 minutes, then you switch.

We learned about wine pairings, soap making from Pacha Soap, playing poker, the life flight at the hospital, science and more!! We had a great time. 

Sunday, Jan. 24


Breakfast was a whole wheat bagel with natural peanut butter, banana slices, honey and chia seeds.


I spent the morning cleaning the house. I had mint chocolate Elli Quark while I meal planned for the upcoming week. This yogurt is so so good!


I love using my dry erase meal planning board!


I was the first person at the gym, and waited in the lobby for the doors to get unlocked so I could run. I got my half-marathon training program from my running coach! I'll share more on that later!


My run wasn't amazing, and my face was super red after. After my run, I rushed home and changed to get ready for ice skating, which started at 1 p.m.


My mom, niece, brother, sister-in-law and I skated for a few hours. It was a lot of fun, and absolutely exhausting!

That evening, the BF and I joined my parents, brother, sister-in-law and my niece to celebrate my parent's 35th wedding anniversary! We had dinner at Whiskey Creek. I had a caesar salad and a baked sweet potato. (I just ordered off the sides part of the menu.)

It was great to get to help them celebrate so many years of marriage!
