Weekend Recap {March 11-13, 2016}

I hope you had a wonderful weekend!

The BF and I didn't have any major plans for the weekend...he had to work and I had to run. 

When I wasn't running, I was eating, doing a bit of work, celebrating my niece's birthday, listening to Serial and watching Jessica Jones on Netflix.

Here is a look at my weekend...

Friday, March 11


After work, my niece and I went on a bike ride! 


It was beautiful outside.


When I got home, the BF and I went to a going away party for an old co-worker's daughter. His 14-year old daughter is going to hike the Appalachian Trail solo! Her mom will be following along on the highway in a camper. 

Saturday, March 12

The BF and I made breakfast together - veggie and goat cheese omelets and breakfast sausage.


I ran 3 miles. It was a bit rough because my legs were super sore from the strength training class I took on Friday. But it was my first tank top run of the year!


I recovered with a Vanilla Almond Latte Protein Smoothie - 1 cup almond milk, 1 tsp. instant coffee, a banana, vegan vanilla protein powder and ice cubes. So so good!


Lunch was a TJ's Quinoa Cowboy Veggie Burger over greens and hemp seeds. These veggie burgers are really good!


After a bit of work on my computer, I made No-Bake Peanut Butter Protein Balls. They were so delicious! Slightly addictive. Go to my Facebook page to get the recipe! Make sure you like my page while you're there.


My parents picked me up to deliver my niece's birthday cake. She had a glamping-themed party with her friends. My mom made the cake!

I'm obsessed with her party theme. It was so cute! My brother made an indoor tent for the girls to play in. They made their own trail mix, made tie dye t-shirts and made s'mores in the fire pit in the backyard. 


My parents and I didn't stay for the party (it was kids only), so we went out to dinner at Market Grille. I had a caesar salad with salmon. It wasn't great. The salmon wasn't cooked as much as I would have preferred, the lettuce wasn't crisp and the croutons were soggy.


When I got home, I wrapped birthday gifts. I bought my niece an art kit, canvases, a sketchpad and the book 642 Things to Draw. She's really artistic and creative, so I went for an art-themed birthday gift. 

I also ate a leftover cupcake while I wrapped!

Sunday, March 13

I woke up feeling pretty tired...daylight savings time. So I oil pulled, drank lemon water, did my meditation, then made breakfast.


Scrambled eggs with goat cheese, sauteed onions, kale and spinach and brown rice.

After I drank my Vega Clean Energy + Electrolytes, I headed out for my run. I ran to the hike and bike trail near campus, then ran on the trail until I hit 3.5 miles. I turned around and ran home.


I listened to Serial during most of my run. I know it's old news, but I just started it and I'm loving it! I don't usually listen to anything while I run, but it helped keep me distracted from my milesage and pace.


When I got home, I recovered with a green smoothie - almond milk, kale, spinach, ground flax seeds, a banana, vegan vanilla protein powder and ice cubes. I also drank water with electrolytes and took some time to stretch. 

After showering, I walked to my parent's house to celebrate my niece's birthday. We gave her gifts and hung out. The BF headed to work. 

When I got home, I ate a TJ's Quinoa Cowboy Veggie Burger, an egg, and brown rice with greens. 


My dad picked me up and we went to Menard's. My dad had to pick up supplies for his bathroom renovation project and I wanted tiles for blog food photos.

I went to dinner with my brother, sister-in-law and niece to keep the birthday celebration going. We went to Ruby Tuesday, and I had the salad bar and crab cakes. It was good.

I spent the rest of the night watching Jessica Jones on Netflix.
