Weekend Recap {March 18-20, 2016}

Hello! I hope you had a wonderful weekend!

My weekend was great! I ran, I ate, I relaxed and I prepared for a healthy week. I actually had a list of things I needed to do (taxes, fitness instructor CEUs, etc.), but I felt like I needed some relaxation and self-care this weekend. 

Sunday was the first day of spring! I'm really looking forward to warmer weather. I also love spring because it's a time of renewal and new beginnings. Friday, March 18

After work, I relaxed with a glass of wine and a magazine. 


The BF and I went to dinner at Flippin Sweet Burger Joint. I had the Holly Golightly Veggie Burger, which is topped with arugula, garlic aioli,caramelized onions and mushrooms. It's so so good! The fries were just ok.

Saturday, March 19

I made avocado toast with eggs, red pepper flakes and pink Himalayan salt. I used sprouted grain bread. 

I attended the Crane Yoga Festival. The host, Terry Lee, invites everyone to her cozy cabin-like home out in the country. Near her home is where hundreds of cranes migrate this time of year. 


We practiced yoga in her yard to the sounds of cranes overhead. I admit, I almost bailed on this festival because it was sooooo cold! It was 28° and incredibly windy. During our yoga practice, I wore a long sleeve shirt, a sweat shirt and my winter coat, and I was still cold.

Luckily, it was a short yoga practice, and we all went inside to warm up with tea and coffee. I really enjoyed meeting new people! Even though we don't have many yoga studios around here, there is a wonderful yoga community.


By the time I got home, the BF had gone to work. I changed and went to the gym to run. I had three miles planned for my training. I noticed that my short runs are finally starting to feel a bit easier!


For lunch, I had leftover crockpot salsa chicken and black beans, leftover brown rice, avocado, plain Greek yogurt and some organic white corn tortilla chips.


Then my mom picked me up for manicures and pedicures! We tried out a new place, Pretty Nails, and we really liked it. I got an Easter egg rose pink color on my toes for spring!


When I got home, I made organic popcorn with butter and pink Himalayan salt, and I watched the last few episodes of Jessica Jones. I'm so in love with this show!

For dinner, I had some black bean and quinoa soup from the freezer. I topped it with some plain Greek yogurt. 

Sunday, March 20 - Happy First Day of Spring!

I had avocado toast with eggs again! I'm obsessed!


I checked the temperature, and decided I would hold off on running until it warmed up a bit. I just didn't feel like getting all bundled up. My niece ended up coming over for a couple of hours in the morning. She went through all my shoes until she found a pair of high heels I would let her have for dress up. I also did my meal plan and made a grocery list while she watched cartoons and ate cereal.


I finally headed out for a run around 12:45 p.m., after the BF had gone to work. I had a banana with almond butter and Vega Clean Energy before I went since it had been about four hours since breakfast. 


I ran to campus, then got on the hike and bike trail. I took the trail toward Yanney Park until I hit 3 miles, then I turned around. My first three miles felt rough. My legs and lungs felt fine, but I just felt an overall lack of energy. But once I hit the halfway point, I felt better.


My recovery smoothie was coconut water, frozen blueberries, strawberries and raspberries, vegan vanilla protein powder and chia seeds. It was really delicious. {go here for my fave vegan protein powder}


I picked up groceries - 


I made No Bake Peanut Butter Protein Balls, Cranberry Pecan Protein Balls, Green Berry Chia Pudding, roasted sweet potatoes, roasted golden beets, quinoa, homemade spelt bread and my apple cider vinegar drinks for the week.


For dinner, I made a veggie quinoa bowl - organic mixed greens, quinoa, roasted golden beets and sweet potatoes, sunflower seeds, Trader Joe's Quinoa Cowboy Veggie Burger and pesto. 

I watched Catastrophe on Amazon Prime and enjoyed a little treat - So Delicious Cashew Milk Ice Cream. Yum!
