Weekend Recap {March 25-27} Easter Weekend

I hope you had a wonderful Easter weekend! 

The BF and I usually go to his grandma's house for Easter, but he had to work this year. So I hung with my family. 

I also did lots of running over the weekend!

Friday, March 25

The BF and I decided to have a little at-home date night. We enjoyed some Rogue Double Chocolate Stout while we made homemade pizza together.

We each made our own pizzas - mine had onions, red pepper, kale, mushrooms, goat cheese and mozzarella cheese. 

Then we watched The Big Short, which was pretty interesting. I admit, I fell asleep for a bit in the middle. It was a little hard to understand because of all the banking lingo. But it was still an eye opening movie. We also ate some Easter candy...I had my one Reece's Peanut Butter Egg of the year.

Saturday, March 26

Breakfast was oats, chia seeds, goji berries, honey, cinnamon, vegan vanilla protein and blueberries (frozen then thawed). 

I went to yoga class at the CHI Wellness Center. It was a great class taught by Mary. We worked on bound extended side angle pose and some people went into bird of paradise from there. I couldn't make that work during class, but when I got home I tried it and was able to get into bird of paradise!! I wish I would have taken a photo!

After yoga, I went into the gym and ran 3 miles on the treadmill. It was pretty cold and windy, so I was all about an indoor run. 

I recovered with a simple green smoothie - almond milk, kale, frozen banana, vegan vanilla protein and ice.

I immediately got busy putting together sample packs to send to special friends and family! The packs include Life's Abundance Vegan Vanilla Protein and Greens Blend. I snacked on organic blue corn tortilla chips and 1/2 an avocado mashed with plain Greek yogurt and red pepper flakes. 

The BF went to work, and I ran a few errands. I went to Natural Foods. I hadn't been there in a couple of years, so I thought I would check it out. I ended up buying organic turmeric. I seriously put turmeric on everything! I also stopped at the grocery store to buy bananas and nut butters...necessities.

For dinner, I made scrambled tofu! This was my first attempt and it turned out amazing! I added turmeric, pink Himalayan salt, garlic powder and nutritional yeast to the tofu, and it was delicious. I also had sauteed Brussels sprouts, kale, onion and mushrooms, and homemade spelt bread toasted and topped with avocado, red pepper flakes and pink Himalayan salt. Best breakfast for dinner ever!

That evening, I went to church with my family. My dad got confirmed and baptized in the Catholic Church. I used it as an excuse to wear my fancy coat. It was a three hour long service, so I didn't get home until about 11:30 p.m. 

Sunday, March 27

I got up and immediately started getting ready to run. For breakfast, I had brown rice, scrambled eggs topped with nutritional yeast, sauteed kale and avocado. I also drank Vega Clean Energy, some water and a few sips of coffee.

I had to run 9 miles, so I brought my water bottle and an energy gel. It was 30° when I headed out, so I bundled up a bit.

I ran to campus and got on the hike and bike trail, then ran out to Yanney Park. Once I hit 4.5 miles, I turned around and headed back. I ate half of my Honey Stinger around mile 6. I actually felt pretty energized still, but my legs were starting to feel heavy. I ate the rest of the gel slowly during the sixth mile.

Overall, the run felt pretty good. I did think I was going to die for a second when I saw a large dog charging full speed at me. I screamed, and the dog stopped. Then its owner finally called for him. It took about half a mile for my heart rate to return to normal. 

It also got warm toward the end of my run. I think it was almost 50° when I was finished. 

I recovered with a smoothie - almond milk, blueberries, turmeric, cinnamon, vegan vanilla protein and ice.

That afternoon, the BF had to go to work and I went to my sister-in-law's family's house for Easter dinner. They have a tradition of making a bunny cake each year. I ate a chicken leg, mashed potatoes, stuffing, egg salad and grape salad. 

My brother, mom and I hid Easter eggs all over the yard for my niece to find. My brother filled them with change, dollar bills, chocolate eggs and the wrappers of the chocolate eggs he ate while he was filling them. 

When I got home, I was exhausted. So I watched all the episodes of Cooked on Netflix. This show is soooooo good! You must watch it. It will change the way you think about food and cooking.

I never got hungry for dinner, so I just ate a banana topped with almond butter, chia seeds and dark chocolate chips.
