Weekend Recap {April 15-17, 2016}

I hope your weekend was wonderful! 

Besides a fun little smoothie happy hour and completing my last long run for half-marathon training, my weekend was relaxing. 

It was a perfect weekend for relaxing since it rained ALL weekend.

Friday, April 15

I woke up in Lincoln at the Embassy Suites! I was there Thursday evening and Friday morning for work. I got up early to run a few miles before I had to be at my work event. The hotel gym is a bit brutal…the treadmills face a grey wall. So boring! But I ran 3 miles.


This is what I pack when I travel for running - Vega Clean Energy, Minerals and Antioxidants and plant protein powder in a blender bottle.

My hotel breakfast was a mushroom, spinach, pepper and onion omelet, breakfast potatoes and watermelon. Embassy has a good breakfast!

On my way home, I stopped at Maggie's Vegetarian Cafe and got a vegan baked falafel wrap. It was delicious!


Friday evening, I hosted a Smoothies and Shopping Happy Hour! 


I made three different smoothies - Strawberry Orange, Blueberry and Green. 


And we shopped The Bandwagon, a mobile boutique. 


It was so much fun having a shopping experience at home. It was very casual, and we were able to sip smoothies and chat in between trips to the truck. 


The Bandwagon has some great items. I bought one of these stone necklaces! 


Everyone got to take home a gift bag full of nutrition supplement goodies!


After the ladies left, the BF saw something on Facebook about an event at the World Theatre. We rushed downtown to check it out, and it was the most amazing thing ever.


Arthur Zamudio-Ortiz of Lexington made a wish through the Make-A-Wish Foundation to produce his own movie. For the past year, a production company has worked with him to create a film called Ugs. Arthur created the characters, drew the initial images of the characters and scenes and he and his family did the voices for the film. We got to watch the film's debut! 

It was such a heartwarming event. Arthur arrived in a limo wearing a tuxedo. He walked the red carpet and was greeted by nearly 500 people, paparazzi and reporters. The film was really cute. 


After the film, we grabbed dinner with our friend Laura at Flippin Sweet Burgers. I veered from Sugar Free April a bit here and had a hamburger bun (added sugar). 

I can't remember which burger I got. It had guacamole and a sriracha sauce. It was good! 

Saturday, April 16

I started my day with yoga at the CHI Wellness Center. Mary taught a wonderful class. 


I had coffee…(I bought this tie dye top at the Bandwagon! It's perfect for throwing on over my tank for yoga). 


I ate oats with chia seeds, cinnamon, almond butter, honey and banana slices as a late breakfast (close to noon). 


I spent the entire afternoon working on my computer and watching Hulu. The BF and I eventually got sick of being inside, so we went to Target and bought nothing (first time ever!) and grabbed ingredients for dinner at the grocery store. The BF made turkey tacos, rice and black bean refried beans. I topped my tacos with plain Greek yogurt.

Sunday, April 17

I slept in, then had scrambled eggs, brown rice, kale, peppers and onions before I got ready to run.


When I went out at about 9 a.m., it had stopped raining. But about 2 miles in, the rain started back up again. It was a gloomy day.


It was misting for most of my run. The rain was a bit heavier between miles 5-7. I stopped at about mile 6 to eat a Honey Stinger Energy Gel. I realized at this point that my jacket was not water proof.


Even though it was rainy, there were still lots of signs of spring!


And I made it 11 miles! 


I was soaked through all of my clothes and my shoes, and my hair looked like I had just taken a shower.

I had a strawberry orange smoothie. 


And a banana with peanut butter, coffee, water, Minerals and Antioxidants and a hot shower.


The BF and I met up with our friends Meggan and Russanne for lunch at El Protrero. I had chicken enchiladas on corn tortillas and all the tortilla chips with salsa.


I made sure to drink my greens to give my body plenty of nutrients and antioxidants after my long run.

The BF had to go to work that evening, so I ate a grilled cheese sandwich on Ezekiel bread, made egg-free peanut butter cookie dough for one (recipe coming soon!), participated in a webinar, watched Soaked in Bleach on Netflix and started watching Batkid on Netflix. I highly recommend both documentaries!

While it was a weekend full of excitement, I still had lots of time for relaxation which was much needed!
