Weekend Recap {May 13-15, 2016}

How was your weekend?

This weekend was my only completely free weekend all month, and it was the perfect combination of fun, relaxing and productive. As always, the weekend went by too fast. But it definitely was a good one.

Friday, May 13

The BF was working late, so I used my alone time to do some housework and work work. I created a great resource for those of you who are interested in learning more about how a health coach can help you lose weight and reach your health goals. Click here to learn more --> bit.ly/sshealthcoach.

I enjoyed a beer while I worked because…Friday.


I heated up leftovers for dinner since I was in work mode. I had spaghetti squash with tomato sauce made with ground turkey.

Saturday, May 14

I started the day with a delicious green smoothie - 1 cup almond milk, 1/2 frozen banana, 1 cup spinach, ice, 1 scoop vanilla plant protein and 1 tbsp. hemp seeds. 

I lounged for a few hours before heading to yoga class at the CHI Wellness Center. Sarah taught the class and it was full of hip openers and back bends. We ended the class by getting into wheel pose (before savasana, of course).

My second breakfast was a runny egg, sautéed spinach and mushrooms and cheddar on toasted Ezekiel bread. So good!

I spent some time shredding and recycling paper until the BF got home from work. So boring, but it has to be done.


Then we headed to Grand Island for a fun little date night. 

First, we shopped a bit. The BF needed jeans. I ended up buying a super cute Calvin Klein tie dye top that will be perfect to wear with leggings during yoga teacher training and an arm band to store my phone during runs. I spent under $25 on both!


After shopping, we grabbed drinks at Prufrock's. 


I ordered a margarita, but they were out of lime juice, so I asked if the bartender could make it a paloma and add grapefruit juice and a lime wedge. He was about to put sweet and sour mix or margarita mix in the drink, but I said no. Those mixes are full of high fructose corn syrup and artificial ingredients. 

We ended up staying there for a long time because our drinks were super strong and we drank them very slowly. I was tipsy after I finished my one drink.


We had dinner at Royal Indian Cuisine. We shared samosa chaat, which was really delicious. I had vegetable korma and garlic naan. Everything was really good.

Sunday, May 15

I slept in, then had protein oats topped with almond butter, raspberries and cacao nibs for breakfast.


I meal planned for the week, and made a grocery list.


Then I got to work meal prepping. I made a chickpea avocado salad to eat over greens, my morning apple cider vinegar beet drink and veggie burgers from the amazing cookbook, Eating Clean. The veggie burgers was first recipe I made from the book, and they were really good. I'm excited to try more recipes! 


I ate one of the veggie burgers over greens with a pesto vinaigrette for lunch. Wow. Really good.


I started watching Happy Endings again from the beginning (I love that show) and I did some more work. I also enjoyed a beer and a Suja probiotic drink. Balance!


The BF and I grabbed dinner at Qdoba. I had my usual - naked vegetarian burrito with brown rice, fajita vegetables, black beans, pico de gallo and guacamole. I had them add sour cream this time, but it didn't really add anything special. We also shared chips and queso. They have the best queso! 

My next few weekends are very full (with fun and exciting things), so it was nice to have a low key weekend.
