Weekend Recap {July 29-31, 2016}

My weekend was super low key…exactly how summer weekends are meant to be. 

My niece and I spent a lot of time together, I spent some time relaxing, I cooled off in the pool, I made a trip to the farmer's market and more. It was a good weekend!

Friday, July 29


After work, I met with a health coaching client (over the phone) before picking up my niece for a sleepover. For dinner, we made Caesar salads and homemade veggie pizza, which we ate outside under the pergola.  


Then we went to Flippin Sweet Burgers to share a milkshake. 


We had a s'mores milkshake and it was delicious!

We spent the rest of the evening watching a Pentatonix documentary. She loves the Pentatonix!

Saturday, July 30


I made us protein pancakes for breakfast. We topped them with almond butter and fresh fruit. My niece watched Annedroids on Amazon Prime while I cooked. She loves that show!


We went to the farmer's market, and bought so much produce! My niece was especially into these baby eggplants. She asked me to take this picture of them ; )


We bought some goodies - a mini banana bread and an aloe plant.

I made us my new favorite drink - coconut La Croix with my tropical fruit minerals and antioxidant mix. So so good!


For lunch, we had roasted vegetables, quinoa and veggie burgers. Then I dropped the little one off at a friend's birthday party.


I was exhausted, so I took some time to relax, drink greens and watch Scandal. 


Later, I did a little shopping with my mom. I bought this Calvin Klein dress (Originally $170. Paid $26). I have nowhere to wear it, but I felt like it needed to be in my life. I was really shopping for cardigans to wear to work because my office is freezing, but that's boring.

That evening, the BF and I went to Grand Island with my parents and niece for dinner. We went to Wave Pizza. I had the Fort Point pizza, which has tomato, goat cheese and spinach. Yum!

Sunday, July 31


Breakfast was scrambled eggs, sautéed vegetables and leftover protein pancakes.


I did some random things around the house, then walked to my parents house for some pool time. 


Lots of quality time with this one!


I made another coconut La Criox + M&A drink. 


After the pool, I meal planned for the week, relaxed, watched Scandal and really did a lot of nothing. Perfection.

There were things I should have done…laundry, work, cleaning the house. But I needed a weekend just like this.
