Weekend Recap {Aug. 26-28, 2016}

I'm feeling more and more grateful for weekends without plans. My weekends were so full in May, June and July, so these late summer easy weekends are amazing.

I decided to keep Saturday totally open, make no plans, put nothing on my to do list and let the day happen organically. 

I was inspired to do this after last Saturday's day-long date with the BF. He didn't tell me anything about the day. I just went along for adventure after adventure.

I tend to get a little wound up about my to do list. But I've realized that when I spend an entire weekend working on my business, I don't feel rejuvenated or inspired for the new week. 

So I'm working on chilling on the weekends…or at least on Saturday. Luckily, this weekend, my easy going attitude spilled into Sunday ; )

Friday, Aug. 26

I was exhausted on Friday after work. It was my first week teaching classes at the university and I also met with  most of my health coaching clients throughout the week. So I relaxed…then did laundry and cleaned the kitchen. 

Saturday, Aug. 27


I woke up early and made protein pancakes topped with coconut butter, raspberries and blueberries. This is the protein pancake recipe I use -->> http://sweetsuccessbysara.com/...


And I enjoyed a big cup of coffee.


The only plan the BF and I had was to meet our friends Laura and Will for a kayaking adventure. We rented kayaks through Kearney Paddle Sports


It was such a beautiful day. 


We were the only people on the canal.



I really want to buy kayaks for the BF and I.


After kayaking, we grabbed coffee at Chapman Swifts Coffee House

Then we walked around downtown. We ended up in a few furniture stores, and we found the perfect chair for our living room! We didn't buy it, but I've been thinking about it ever since.


We grabbed lunch at Nick's on the Bricks, a Greek restaurant. It was our first time there. There weren't many dairy-free options for me. I ended up ordering a chicken pita with no cheese and fries. I only ate a few bites of the sandwich because I didn't like the chicken and the sandwich was kind of blah. The Greek nachos the BF ordered looked insanely delicious though!

We spent the afternoon relaxing.


Then we had dinner with my parents at Old Chicago. Again, there wasn't much for me to order. I ordered a spinach salad with chicken, sun dried tomatoes and lemon vinaigrette dressing. Again, I didn't like the chicken. Luckily, I ordered a Scratchtown beer to enjoy.

This is when I started to feel pretty down about my new dairy-free lifestyle. It's easy to eat dairy-free at home, but eating out is really hard. The food that I've ordered at restaurants has been so blah. I also don't love eating meat. But ordering vegan food in rural Nebraska isn't easy, so I've been trying to stay open to eating meat. 


After dinner, we checked out my parents new land. They're building a house! This is pretty much my favorite picture ever. 

Sunday, Aug. 28


Breakfast was scrambled eggs, sprouted grain toast topped with Earth Balance Buttery Spread, an apple cider vinegar drink, coffee and my supplements. Earth Balance is the only dairy substitute I've bought so far. I really missed butter on my toast!

I meal planned for the week. 


The BF and I went to Target, so I could get dairy-free snacks. I haven't been eating a whole lot because I haven't been excited about food. (I'm working on changing my mindset around eating dairy-free.) I try to eat mostly whole foods, but having some healthy store-bought snacks makes eating on the go easier. I've never had the savory Kashi bars, the Bare banana chips or the Pro Bars, so I'll let you know how they taste. 


The BF watched the Portland Timbers play, so I enjoyed some rosé with antioxidant ice cubes and organic popcorn with avocado oil and pink Himalayan salt while I watched the Real Housewives of New York on my computer. Air popped popcorn with avocado oil is the BEST!

I also ordered a new desk for my home office from Target because they were having a 10% off everything sale. I'll share details about my office soon!

The BF and I grabbed dinner at Buffalo Wild Wings. Our server brought me their allergen booklet, which made ordering sooooo much easier! I had boneless wings with honey barbecue sauce. Not a healthy dinner, but it tasted amazing. 

It was such a great weekend. I wasn't ready for it to end.
