Weekend Recap {Jan. 13-15, 2017}

Today is my favorite kind of Monday...I slept in (I got nine hours of sleep last night!), I'm still in my pajamas, I'm under a fuzzy blanket and I'm sipping coffee. I had today off from MLK Day, but a lot of the city is shut down because of an ice storm.

We were anticipating the ice storm, so we didn't make any plans for the weekend. It ended up being the most relaxing weekend that I can remember.

Friday, Jan. 13


I turned on an episode of 10% Happier and started putting some laundry away, but I ended taking all of my clothes out of my dresser and closet to purge. Ever since I watched Minimalism: A Documentary, I've been getting rid of things.


I ate some air popped popcorn with avocado oil and pink Himalayan salt while I watched The Man in the High Castle. 


Later, I made dinner - quinoa and brown rice, sautéed kale and shaved Brussels sprouts, roasted cauliflower and tofu. 

When the BF got home from work, we went to the grocery store to stock up for the ice storm. I got the necessities...kombucha, guacamole, organic tortilla chips, eggs, spinach, almond milk and wine. 

Saturday, Jan. 14


I started a day with a green smoothie - almond milk, banana, spinach, liquid fish oil and vanilla plant protein.

I went to a yoga class at the CHI Wellness Center

I had my own little brunch when I got home - avocado toast and eggs topped with red pepper flakes and pink Himalayan salt. 


Then I relaxed with all the drinks...coffee, minerals and antioxidants and water.

I created a collection of barre workouts on Grokker, so I can do them at home. I took a barre class at a local studio last week, and it reminded me how much I loved the barre class I took at Pink Barre in Atlanta. 


I did some organizing around the house, including my office. I had to find a home for my new business cards!

I also ended up going through all my beauty products and got rid of lots of samples and old products. It feels so good to get rid of things. 


The BF and I made tacos for dinner. I had tofu quinoa tacos and he had beef tacos.


Sunday, Jan. 15


I made vegan banana bread and a breakfast casserole


I read my book club book, drank coffee and put on a hydrating face mask. We're currently reading Whistling Past the Graveyard by Susan Crandall


The day was spent reading magazines, working on my February Self-Care Calendar (a free goodie for you...sign up for my newsletter to receive it), watching Divorce on HBO, drinking greens, listening to records, reading my book club book, watching the Man in the High Castle, drinking wine and putting together our new indoor herb garden that we got for Christmas.


For dinner, I made vegan macaroni and cheese, turkey burgers and salads with kale and shaved brussels sprouts with dairy free Caesar dressing.

Surprisingly enough, I'm not sick of being in the house yet. On today's agenda: yoga, meal planning and meal prep, reading, blogging, doing some work with the nutrition line that I've partnered with, working on my health coaching business and relaxing.
