Weekend Recap {March 3-5, 2017}

Happy Monday! How was your weekend?

I got a lot of rest this weekend. I must have needed it! 

We also got a chance to get outside and enjoy the nice weather. I'm ready for spring!

Friday, March 3

When I got off work, I enjoyed wine, organic tortilla chips and homemade guacamole. I started watching Big Little Lies on HBO, and it is so good! I never read the book, but now I'm thinking I should.

When the BF got off work, we watched Mike and Dave Need Wedding Dates, which was fun. 

Saturday, March 4

I had Ezekiel toast topped with almond butter, banana slices, honey and chia seeds for breakfast. 

The BF and I drove to Hastings early to do some work on the BF's old house to get it ready to sell. We also had lunch with our cabining crew to plan our next trip. 


When we got home, we took a tour of my parent's new house. It's going to be amazing when it's finished. 


We had dinner with my parent's at Old Chicago. I was really craving pizza so I had the Mediterranean Farmer pizza, which has tomatoes, sundried tomatoes, spinach, artichokes and goat cheese. 

I was exhausted from all the work we did that morning, and I fell asleep on the couch before 10 p.m.

Sunday, March 5


For breakfast I had scrambled eggs with peppers, onions and thyme and Ezekiel bread with avocado oil.

I spent the morning working on Nutrition School, getting ready to start B-School, checking emails, working on my health coaching business and meal planning.


I had leftover pizza for lunch before the BF and I headed out to Fort Kearny for a hike. 


It was a beautiful day.


It's crane season in Nebraska, so we expected to see lots of them. We could hear them, but we ended up only seeing this small group in the sky.


Our hike made us both ready for consistent warmer weather.


We also saw some kayakers on the Platte River, which brought up a recurring conversation about buying kayaks ; )


It was a great way to spend a Sunday afternoon. 


After our hike, we shopped for groceries. We got really lucky! Organic cauliflower was the same price as regular cauliflower and organic broccoli was cheaper than regular broccoli! These things really excite me. 


Then I meal prepped for the week. I'm doing a detox this week for me and for you! After I broke the seal of our Girl Scout cookies, I've been eating more sugar than usual and I've had major sugar cravings. I'm also working on lowering my liver enzymes to help balance out my hormones (functional medicine doctor recommended).

For dinner, we had butter chicken, which I had cooked in the crockpot all day. It was one of the freezer crockpot meals I made in January. It definitely needed more spices, but it was good. I've never ordered butter chicken at an Indian restaurant, but this version didn't actually have butter in it. 

It was a great weekend!
