Weekend Recap {May 5-7, 2017) - Planting our Garden

I'm coming into Monday feeling a bit exhausted from a day spent outside planting our garden. 

I admit, I'm not that into gardening. But I do love being able to walk outside and pick the food I'm going to eat. So all the hard work was worth it. 

Here's a look at the weekend and our gardening adventure...

Friday, May 5 - Happy Cinco de Mayo! 

My office was about 50° all week, and by Friday I was totally over it. My nose was running, my fingers and toes were numb and I couldn't concentrate on my work. So I worked from home all afternoon. It was perfection, and I got so much more done. 


When I finished my work, I went on a walk in my new Brooks.


Then made champagne margaritas and ate organic tortilla chips with guacamole. 


Later, I made tempeh and vegetable stir fry for dinner. 

Saturday, May 6

Breakfast was cold oats with dried blueberries. 


I went to yoga at the CHI Wellness Center. It was a sweaty and challenging class. I stayed hydrated with my minerals and antioxidant drink


While the BF mowed the lawn, I planted my succulents. 


Keeping my fingers crossed that I can keep them alive this year!


I did some cleaning, and made a simple lemon infused water to drink throughout the weekend. I have this water infusion pitcher

I also like to add my minerals and antioxidant powder to infused water to give it a new flavor.


I also pruned our indoor basil plant. We got this Aerogarden for Christmas from my aunt, and we love it!

That night, my mom and Lacy, my BF from high school, went to see Kelli Miller, a psychic and medium. She did a talk and live audience reading. I admit, I was a little skeptical going in. And my first impression of her wasn't great. She was checking in the attendees, and she was not friendly and cursed a lot. It was weird and not a great customer service experience. 

But I really loved her talk. She talked about the power of positive thinking, manifesting your dreams through visualization, mindfulness, meditation, connecting to your own spirituality in a way that is meaningful to you...all things I believe in and practice. 

Then she did the audience reading, and she connected with Lacy's grandfathers right away! It was really crazy, and emotional for Lacy. She spent about an hour and a half connecting with the spirits of people's loved ones, which was really interesting. We ended up leaving early because it was just going on and on, and I was kind of over it by 10 p.m. Maybe it was because the event was advertised as being from 7-9 p.m.

Sunday, May 7


This weekend was the first weekend it was warm in the mornings, so I took my coffee outside to read and meditate. It was amazing. I'm almost finished reading You Have Four Minutes to Change Your Life. If you're new to meditation or you're interested in incorporating short meditations into your day, you need this book!


I made sautéed veggies and scrambled eggs for breakfast, then I started swapping my winter wardrobe out for my spring/summer one. I love doing this every year!


Around noon, the BF and I went to Menard's to buy fencing for our garden and pick up the rest of our plants at Kaw Valley Greenhouse. I really wanted to buy more succulents, but I resisted.


This Izze Sparkling Blueberry had been in our refrigerator for a long time, so I finally drank it. I'm currently trying to use up all the things in our house - makeup/skincare samples, food from our freezer and pantry, etc. 


We ate veggie burgers and salads before heading outside to start working on our garden. I used Hilary's Chia Ranch dressing. 


We spent the rest of the afternoon installing the fence, planting and putting down mulch to prevent weed growth. We only had to make one more trip to Menard's ; )


We planted heirloom tomatoes, San Marzano tomatoes, bell peppers, jalapeños, kale, yellow squash, zucchini, rainbow carrots and lettuce. All organic!


By the time we were finished, we were both exhausted. We had intended to grill for dinner, but we ended up driving through Arby's because we were so tired and we hadn't picked up groceries yet. I had a turkey sandwich and fries. We underestimated how much time planting our garden would take! 

When I was scrolling through social media over the weekend, I was feeling a bit jealous of all the photos of people kayaking, camping and doing fun things while we spent the whole weekend at home doing yard work and house work. But I'm glad we got our garden planted. Now I'm ready to start planning some summer fun!
