Chocolate Chia Pudding

Posted February 10, 2015 in chocolate, self-love, Self-Love February and 6 more

Chia pudding is one of my fave sweet treats! It's super easy to whip together, it's delicious and it's full of nutrients.

Chia seeds are full of fiber, antioxidants and omega-3 fatty acids. What's better than satisfying your sweet tooth and nourishing your body?

I usually just throw together some almond milk, chia seeds and a natural sweetener, but I decided to make a chocolate version to satisfy my chocolate cravings.

It was delicious!

How to meal prep for a healthy week

Posted May 19, 2015 in meal prep, healthy eating, healthy and 6 more

Most Sundays, I whip up a few recipes that will make eating healthy throughout the week more convenient. I've found that this is the best way to stick to healthy eating!

Why? Because eating healthy takes more work than eating junk. When you get home from work after a long day, cooking a healthy meal from scratch can seem like a lot of work. But taking a bit of time on Sunday to prep those meals is a huge time saver!

I generally prep more snacks and veggies than actual meals. But I'll occasionally roast a whole chicken or make shredded chicken breasts in the crockpot to use for chicken fajitas, pesto chicken or buffalo chicken pizza.

Here are more prep ideas....

Chia pudding is one of my favorite sweet snacks. I always crave a little sweet treat in the afternoons, and a bowl of chia pudding always satisfies my sweet tooth.

Chia seeds are packed full of fiber, antioxidants and omega-3 fatty acids, so I'm also getting a nutritious little snack.

I'm currently obsessed with berries. Berries are finally flavorful and affordable enough to buy, so I've been buying them all!

Pumpkin Pie Chia Pudding Parfait

Posted September 30, 2015 in Pumpkin, Fall, recipe and 9 more

I recently made one of my favorite recipes that I created last fall - Pumpkin Pie Chia Pudding. It's so delicious, and very pumpkin pie-like.

But I realized it could be even more like pumpkin pie if it had whipped cream on top! My whipped cream addition turned into the perfect little fall dessert that will satisfy your craving for pumpkin pie, but without tons of sugar.

Vanilla Almond Chia Pudding

Posted February 4, 2016 in chia pudding, snacking, healthy recipes and 5 more

One of my favorite sweet snacks is chia pudding. It's delicious, filling and full of nutrition.

Chia seeds are a great source of omega-3 fatty acids, protein, fiber and calcium. I put chia seeds in my morning oats, in overnight oats, in smoothies, in pancakes, in yogurt and on salads. You can also add them to muffins, breads or cookies when you are baking.

This chia pudding is incredibly delicious. I sweetened it with dates and honey, and added some oats for a little extra staying power.

This is the perfect snack for an afternoon sweet tooth/energy boost!

What I Eat in a Day {Jan. 24, 2017}

Ever wonder what a health coach eats throughout the day? Today I'm sharing every single thing that I ate yesterday!

Tuesdays are my longest days, so it's important that I eat for optimal energy. I teach fitness classes at 5:30 a.m. and 5:30 p.m. and work my 8 to 5 in between, so it's a long day that requires plenty of energy.

I'm usually pretty tired by the time I get home, which is why I try to keep dinner simple - leftovers or something easy to throw together.

I'm currently not eating dairy, and I usually only eat meat a couple times a week. Tuesday just happened to be a dairy-free, meat-free day (not vegan because I ate eggs).

I don't count calories or track my food. I simply focus on eating whole foods that will make me feel my best.

Here's a look at my entire day...

One of my favorite things about summer is fresh berries. They're so flavorful this time of year.

On Sundays, I like to whip up a batch of chia pudding so that I have healthy snacks throughout the week.

Because it's summer and I'm obsessed with berries, I added strawberries, blueberries and raspberries to my usual chia pudding recipe, and the result was this beautifully colored, delicious tasting summery chia pudding.
