Weekend Recap {Aug. 19-22, 2016}

Happy Monday! It's a big week! The college course that I'm teaching starts on Tuesday, I have sessions with all of my health coaching clients scheduled this week and I'm scheduled to have a Sweet Success Health Coaching booth Thursday evening. 

I'll be honest, I was crazy stressed going into this week…especially because I got a headache Thursday night and it hung on until 4 a.m. this morning. 

It was the BF's first weekend off all summer, I felt like it was my last weekend of summer and I had a lot I wanted to accomplish to get ready for this week. So being in pain made the weekend stressful.

Weekend Recap {Aug. 26-28, 2016}

I'm feeling more and more grateful for weekends without plans. My weekends were so full in May, June and July, so these late summer easy weekends are amazing.

I decided to keep Saturday totally open, make no plans, put nothing on my to do list and let the day happen organically. 

I was inspired to do this after last Saturday's day-long date with the BF. He didn't tell me anything about the day. I just went along for adventure after adventure.

I tend to get a little wound up about my to do list. But I've realized that when I spend an entire weekend working on my business, I don't feel rejuvenated or inspired for the new week. 

So I'm working on chilling on the weekends…or at least on Saturday. Luckily, this weekend, my easy going attitude spilled into Sunday ; )

I woke up this morning and thought it was Saturday….it's Monday. I have a feeling it's going to be a long week.

I'm totally exhausted after being in yoga teacher training over the weekend. I plan to take it easy the next couple of days - keeping my workouts light and not scheduling too many health coaching consultations or client sessions.

Happy National Guacamole Day!

Since eliminating dairy from my diet nearly a month ago, I've basically replaced cheese with guacamole. The amount of guacamole and avocados that I've eaten in the past four weeks is a little obscene. 

I can't even tell you how many times I've eaten sprouted grain bread toasted and topped with guacamole and eggs. But I have no shame!

Which is why I feel like this is a (internet) holiday worth celebrating.

Weekend Recap (Sept. 16-18, 2016}

It's Tuesday and I'm finally writing my recap of the weekend! The weekend ended up being full because the BF's family was in town, and my Monday was a bit crazy.

I'm still working on creating a routine and managing my workload with the new class that I'm teaching at the university. I'll be honest, my Sweet Success work is getting harder to manage…which is why I turned down an offer to teach another class next semester. Saying no is so hard! 

But when I thought about my mission - inspiring people create change to live their healthiest and happiest lives - I knew I needed to say yes to myself and my goals. 

I have a full week, and it feels a bit overwhelming. So I'm making self-care a priority. I got a massage yesterday after work, I'm getting back to consistent meditation and I have a few yoga classes scheduled this week.

Since giving up dairy, one of the things I have missed is the occasional dessert. I have a sweet tooth, and while I don't eat indulgent desserts often, I enjoy them every once in awhile.

Some friends gave the BF and I a bunch of peaches, and I was inspired to do some baking. I found a recipe for a summer fruit crumble, and revamped the dessert so it was dairy-free and gluten-free.

It's been so long since I created a new energy ball recipe! I had a craving for chocolate, so I created this delicious chocolatey recipe with a hint of coconut and sea salt. So good!

These energy balls are full of fiber, omega-3's, plant protein, healthy fats and vitamins and minerals.

They're a perfect pre- or post-workout snack or even a healthy snack to satisfy your sweet tooth. I ate a couple of these in the afternoons for a sweet treat and energy boost.

I can't believe that I'm almost finished with yoga teacher training! I only have one weekend left!

This weekend was incredibly physical and intense. Last week was a very emotional week, so I wasn't super excited about being immersed in yoga all weekend. But teacher training ended up being a good distraction. 

All the positive energy through yoga practice, meditation and from everyone in my class was what I needed.

Dairy-Free Vegetarian Dinner Recipes

I've been eating dairy-free since August 17!

My functional medicine doctor, Dr. Allison Blessing, recommended that I cut out dairy to balance out my hormones. I also went off my birth control because there's no way I could balance my hormones while on birth control. (read more about it here)

So far, I've felt amazing. Within the first couple of weeks, I noticed that I looked a bit slimmer. I was most likely experiencing some bloating from the inflammation that dairy was causing. Best of all, I haven't had any hormonal migraines! 

I'm feeling really optimistic about my journey so far. Later, I'll share more about how a hormone imbalance can impact your health, but today I wanted to share what I've been eating.

One of my favorite things to do on cold, winter weekends is drinking coffee while I cook a delicious breakfast. 

I like making something that I wouldn't typically make on a weekday, and something that tastes a little decadent. 

Since I gave up eating dairy, I haven't made as many weekend breakfasts. I think I just wasn't feeling super inspired so I stuck to drinking green smoothies, eating scrambled eggs or having oatmeal.

I stopped eating dairy last August and, honestly, it hasn't been as hard as I thought it would be.

My functional medicine doctor recommended that I eliminate dairy from my diet to balance my hormones to alleviate my hormonal headaches and because my blood work showed a sensitivity to casein. 

Many people eliminate dairy because of an allergy, to see if they have a food sensitivity or just to see if they feel better without dairy in their diet. 

How could giving up dairy improve your health?
