Blue Apron Review

Posted October 14, 2016 in Blue Apron, healthy eating, home cooking and 4 more

I've been curious about Blue Apron and other healthy recipe delivery services for awhile. When I realized the BF and I had been eating out a lot on the weekends, I decided to try one out.

I knew it would help us stay in and cook, give us new inspiration in the kitchen, be healthy and allow us to save on food spending on weekends.

Dairy-Free Vegetarian Dinner Recipes

Posted October 26, 2016 in vegetarian cooking, dairy-free cooking, vegetarian and 6 more

I've been eating dairy-free since August 17!

My functional medicine doctor, Dr. Allison Blessing, recommended that I cut out dairy to balance out my hormones. I also went off my birth control because there's no way I could balance my hormones while on birth control. (read more about it here)

So far, I've felt amazing. Within the first couple of weeks, I noticed that I looked a bit slimmer. I was most likely experiencing some bloating from the inflammation that dairy was causing. Best of all, I haven't had any hormonal migraines!

I'm feeling really optimistic about my journey so far. Later, I'll share more about how a hormone imbalance can impact your health, but today I wanted to share what I've been eating.

I hope you had a wonderful Thanksgiving.

The BF and I had a very low key Thanksgiving this year. Since we didn't have plans for traveling, we decided to volunteer in the afternoon and have my parents over for dinner.

The rest of our holiday weekend was relaxing. I didn't make any plans, so we just kind of went with whatever we felt like doing.

Pumpkin French Toast {dairy-free}

Posted December 13, 2016 in Pumpkin French Toast, dairy-free cooking, dairy-free and 4 more

One of my favorite things to do on cold, winter weekends is drinking coffee while I cook a delicious breakfast.

I like making something that I wouldn't typically make on a weekday, and something that tastes a little decadent.

Since I gave up eating dairy, I haven't made as many weekend breakfasts. I think I just wasn't feeling super inspired so I stuck to drinking green smoothies, eating scrambled eggs or having oatmeal.

Healthy Crockpot Freezer Meals

Posted January 27, 2017 in Healthy Crockpot Freezer Meals, dairy-free cooking, healthy eating and 5 more

I got super motivated a few weeks ago, and I made eight freezer meals that can be thrown in the crockpot for super easy dinners!

While the BF and I very rarely eat out on weeknights, we often go out to eat a few times on weekends. I love going out for dinner, but it can get expensive.

Our struggle with cooking at home on weekends is that we are usually running low on fresh produce by the weekend, and we forget to thaw meat from our freezer for the meals we planned. So I thought having meals pre-made that can just cook all day would be the perfect solution for our weekends.

Weekend Recap {June 9-11, 2017}

Posted June 13, 2017 in Weekend Recap, yoga, hiking and 4 more

Ahhh, summer weekends are just the best. I guess it's not quite summer yet, but the weather feels very summer-like.

I taught three yoga classes, then spent the rest of the weekend relaxing and spending time outdoors. The fiancé and I got in a good workout on Sunday to prep for an upcoming trip.

Here's a look at my weekend adventures...
