Chocolate is definitely my fave sweet treat - chocolate cake, chocolate chip cookies, chocolate ice cream. Mmmmmm. I could eat chocolate every day.

I've been buying Blue Diamond Nut-Thins for awhile, so when HyVee gave me a box of the Almond Nut-Thins in Hint of Sea Salt and a box of Artisan Nut-Thins in Asiago Cheese I was super excited. But when they suggested I try a recipe using the crackers, I was intrigued.

I've never thought of using crackers in a recipe, especially a sweet treat.

Trader Joe's & Whole Foods Haul {April 2015}

Over the weekend, I was in Lincoln so I made my usual trip to Trader Joe's and Whole Foods!

I've mentioned this before, but I live in a small city and the nearest TJ's and WF are about two hours away. Every time the BF and I go to Lincoln or Omaha we stop to stock up on our fave items.

My goal for this shopping trip was to pick up some gluten-free items for the BF (he eliminated gluten temporarily to see if it makes him feel better and I'm joining him to be supportive) and to get some running fuel. I also picked up some of our staples (21 Seasoning Salute, apple cider vinegar, coconut products, etc.) and a few treats that I impulse purchased.

Lincoln Half-Marathon 2015 Recap

I can't believe the Lincoln Half-Marathon is already over! I spent 12 weeks training, and in one morning it's done.

As I mentioned in my training recaps (here and here), I suffered from some chronic hamstring pain throughout training. This was due to teaching 4-5 cardio fitness classes a week on top of training for the race. In the two weeks leading up to the race, I only taught 1-2 classes a week in hopes that my hamstrings would recover and my legs would feel fresh for the race.

Unfortunately, my hams were hurting within minutes of beginning the race.

The BF had a little hitch in his run also because he was battling a chest cold the entire week before the race. The morning of the race his coughing sounded pretty rough.

We decided to take the race slow, not worry about our time, and just get through it.

Orange Coconut Macaroons

I've been hosting a 30 Day Clean Eating Challenge on Facebook, and I'm going to be real...I miss sweets!

The challenge came at the perfect time for me - after two weeks of indulging in sweet treats for my birthday celebrations. Cake, cookies, champagne cocktails, French macarons and more! Once I start having real sugar, I crave it ALL the time.

When I cut out refined sugar, my sweet tooth isn't as crazy. But it does take me awhile to detox from the sugar.

We're about halfway through the clean eating challenge, and while I don't crave sugar like I was after my birthday extravaganza, I've still been craving sweets after dinner. I even caved and had a mini shake from a fast food place. I felt super sick after from the sugar. I am obviously in need of some healthy sweet treats that are made without refined sugar.

So I made coconut macaroons!

Brownies are definitely one of my favorite sweet comfort foods. There's nothing quite like the gooey chocolatey goodness of a brownie.

And if you've never tried making black bean brownies, you are totally missing out. The taste of the black beans completely disappears, and you don't have to use any flour! The black beans add tons of fiber and make the brownies super moist.

I found a recipe for black bean hemp brownies on the Manitoba Harvest website that looked delicious. I decided to add another superfood seed to the recipe to make the brownies even more nutritious! And Black Bean Super Seed Brownies were born.

Dark Chocolate Pomegranate Cups {just 3 ingredients}

I'm getting so excited for Christmas baking. I love spending a day in the kitchen with my KitchenAid mixer making delicious sweet treats. 

Baking during the holidays always brings back great memories of baking Christmas cookies with my mom and dad, brother, aunt and cousins. Some of my favorite holiday cookies from my childhood include peanut butter blossoms, peanut butter balls (for some reason my family calls them zit crunchies), cherry mash and homemade Mounds. When my grandfather was alive, he would make homemade fudge and chess pies. So delicious!

Although I have lots of great memories from the baking process and from enjoying my family's treats, I also remember overindulging in sweets and feeling sick, lethargic, bloated and gross. So a few years ago, I started making some of my own healthier sweet treats using less sugar or natural sweeteners. I found that I didn't indulge in as many cookies, but I still felt like I was getting a special holiday treat.

I have a major sweet tooth! I love cakes, cookies, doughnuts, chocolate, scones, pastries and candy. Yep, I love it all.

And there was a time when I indulged in those things far too often. I had to have them! And once I started eating something sweet, I couldn't stop. I just wanted more and more. Then I felt guilty for eating so much sugar. So I would eat some more! 

Today, I don't crave sugar like I used to. I don't feel that intense desire to eat cookies or chocolate. And when I do eat something sugary, I don't feel guilty.

Incredibly rich and peanut buttery, your tastebuds won't believe that this ice cream is dairy-free, sugar-free and made with just a few ingredients.

Ice cream is definitely my favorite warm weather treat. But as much as I love Ben & Jerry, they are no help in reaching summer weight loss goals. 

I made this vegan ice cream using frozen bananas as the base - no dairy necessary.

I've made vegan ice cream using bananas before, but I never added in any extra ingredients. The result was a very banana-y ice cream. I love bananas but, let's be real, it didn't really taste like ice cream. 

This version tastes so good, I made it three days in a row!

Since giving up dairy, one of the things I have missed is the occasional dessert. I have a sweet tooth, and while I don't eat indulgent desserts often, I enjoy them every once in awhile.
