We're back at the beginning of another week. I wish weekends could last forever.

The weather was finally late spring-like, so the BF and I spent lots of time outside. We went to the farmer's market, we planted our garden and we went trail running/hiking. It was nice to have a weekend without rain!

Weekend Recap {Aug. 7-9, 2015} - 40-mile bike ride!

I decided I needed a three-day weekend to relax and recharge a bit. I had been feeling tired and run down all of last week, so I took Friday off work to take it easy and spend time with my niece before the school year begins.

How was your weekend?

The BF and I didn't have any plans! It was much needed after a summer of busy weekends.

I made it a priority to do things that I wanted to do, and to avoid my to do list. I definitely need more self-care on the weekends and I need to focus more on being present. I tend to constantly look toward the future and stress about the things I need to get done.

I go into a new week feeling more recharged and rejuvinated when my weekends are filled with relaxation and fun.

How to make and freeze pesto

The BF and I planted two basil plants in our garden this year, and we an have an abundance of basil.

I had grand plans to make batches and batches of pesto, then freeze it so that we could enjoy fresh pesto all winter long. But it hasn't happened yet.

I've made pesto for the past few summers, and it's always delicious. It's perfect to use as a turkey burger topping, on whole wheat pasta or spaghetti squash, on chicken or on roasted vegetables.

Weekend Recap {Sept. 25-27, 2015}

I'm going to be honest, I wasn't excited to share my weekend with you this week. When I started thinking about how my weekend went, I could only see the negatives...I didn't get a lot of sleep, I had a headache all weekend, I didn't get much of my to do list done, I didn't do laundry, I didn't clean my house and I indulged more than usual because I didn't feel well and I was tired.

But I realized that I often beat myself up for what I don't get done. So I'm taking a moment to think about the positives from the weekend.

  • I spent tons of time with my parents and my niece, Brynn (dinner out, homecoming parade, supermoon viewing in the backyard)
  • I made delicious breakfasts Saturday AND Sunday mornings.
  • I picked so much kale from my garden.
  • I got to see that amazing moon.
  • The BF spent tons of time together.
  • I decorated for Halloween.
  • The BF and I didn't get sucked into Sons of Anarchy until Sunday.

I also realized that I want to share my super healthy weekends and my not-so-healthy weekends with you. Because this is life. Sometimes it's hard, and I struggle.

Everything you need to know about kale!

Kale has been having a major moment for awhile now, but it seems like people either love it, hate it or are scared to try it.

Almost every time that I buy kale, the grocery store associate ringing up my groceries says she's never tried kale before and doesn't know what to do with it. I always suggest massaging the kale, and I get blank stares.

Mondays in the summer are always a bit of a let down. After having two days of fun, relaxation and sunshine, it's back to my freezing windowless office. 

I realized recently that I live for the weekends. Starting on Monday, I'm thinking about what I'll be doing on Friday at 5 p.m. It's not the life that I want to be living, which is motivating me to work hard on a few things. I'm feeling a need for change!
